Hi all! I am Karen, The Journey Girl , living out my dreams up here in the Back of the Beyond in Ferry County, Washington. My food style is delicious home cooking that both my family and yours will love. I cook straight from my heart and every dish is made with love. Hardy, home style meals with a flair or two thrown in for good measure! My husband Dan and I grow our own fruits and vegetables that we can or freeze to enjoy all year long. We raise chickens so we have a plentiful supply of farm fresh eggs. I love to cook and I like to teach others how to prepare nutritious and delicious foods. We have been blessed to travel the world and sample foods from many different countries and cultures which I will share with you here. I believe all of life is a journey and not just about traveling, but the experiences that unite us all. Shrimp Louie Salad
This absolutely fabulous shrimp salad just screams Spring! So fast and easy to put together, you'll have dinner on the table in no time. Other than boiling a couple of eggs there is no cooking involved! The Louie dressing is delectable and made with ingredients you most likely have in your pantry. This beautiful salad will be a wonderful addition to your favorites.
Shrimp Louie Salad Dressing
1 cup mayonnaise
3 Tbsp ketchup
1 Tbsp sweet pickle relish
1 Tbsp lemon juice
1 tsp horseradish cream
1/4 tsp smoked paprika
1/4 tsp salt
1/8 tsp pepper
1/8 tsp garlic powder
Combine all of the above in a small bowl. Cover and refrigerate until needed
Salad for 2 servings
1 Romaine lettuce heart, sliced into bite size pieces
1/4 English cucumber, thinly sliced
4 radishes, thinly sliced
2 plum tomatoes, cut into wedges ( or use grape tomatoes)
2 hard cooked eggs, cut into wedges
1/2lb pink shrimp or salad shrimp

I made this recipe and my family lived them. How much longer cooking time do you think will be needed if I double the recipe?
If you use a bigger pot, the cooking time should be about the same. Using the same size bean pot, I would add at least 30 minutes. So happy they turned out well for you!

You place chick peas in water with a bit of baking soda and the shells float to the top. This can be done stovetop in boiling water or even by letting the peas sit in water. It super simple. It only takes a few minutes. The hummus turns out super creamy. I prefer the grainy texture but some cultures prefer creamy.

If you don't own a bean pot, can I use a dutch oven?
I'm very familiar with West Port, having lived in Aberdeen. I've even gone crabbing there.
Almost how my mother taught me. I do soak them overnight and the next morning drain the water and add fresh. I add the ingredients except the salt port and molasses and parboil, Add the beans to the pot, then the molasses and the pork, 4 hours covered and 2 uncovered adding water when needed. Almost the same but I use a bean pot as well, I have 2 sizes. I have tried other methods they just do not seem to taste the same. Now I need to make some after watching this

I have some old cookbooks and a couple with 18th century recipes. They call to not save the cooking liquid for some reason. One recipe even said to throw it away outside, not down the drain. Anybody know why they didn't save the cooking water back then?

Hello Sic-n-tired. You can use any deep dish casserole baking bowl. Better if it has a lid but covering with aluminum foil works too. Hope you become healthy -n-energised!

This recipe's ingredients are very similar to my grandmother's which are in my oven right now. However, the cooking times are quite different. Her recipe calls for a total of 7-8 at 300. She used to bake beans and brown bread EVERY Saturday night and sell to the neighbors :) They loved them. I don't think the ones that I'm baking right now would sell, haha. I'll keep trying......................

A squirt or 2 of ketchup is fine if that is what you like. My husband says I can't ever leave a recipe alone! But then they are not the traditional Boston Baked Beans which is what I love.
