    Curious, if the adding of shims of the inner burr was done after getting a perfect wipe on the outer burr, don’t we have to calibrate the outer burr again since the position of the inner burr shifted a bit due to adding of shims?

    The Decent is just a rabbit hole. So many ways to diesect your shot, profiles of different machines like the Slayer,lever E61 etc. Add all the other tricks with flow rate,pressure profiling and the list goes on. The geek in me wants a Decent 😂. Also using the scales that go with the decent improves shot weight out again another gadet.

    Excellent selection of three very different ways of doing espresso in today’s market. However, I feel you might have mentioned the maintenance required of machines which include heated boilers, or their special water requirements. It’s a big issue in limiting or extending their lifetimes.

    Great video. Wouldn’t you want to use a permanent marker to note where the burrs are placed on the carrier? Or are you just making sure you put the burrs back in the same spot after shimming each time? I say this because it could either be the burr or the carrier causing misalignment and if you shim and happened to put the burr back in a different way, the alignment would be off.

    I use distilled water, but add some soda ash, and potas carb and it does make big difference to my taste buds. For a week or so, I am not enjoying coffee, as I think I got espresso overload with too many off dialed espresso shots, and I forgot what "good" is supposed to be like. I may have to visit one of the stricter , better cafes to get back on track, lol. Not sure if others who are often using different profile beans can get this way? I miss enjoying espresso.

    You mentioned something all these "top" reviewers barely mention, or skim over, and thats the grind precision of espresso grinders. The 1mm thread pitch. Many espresso grinders are stepless, and reviewers really need to mention this. I use a Eureka 54mm and the adjust knob is horrible, as you can never get it dialed in with ease. I waste 3-7 shots. Also that when ON under load the adjuster moves different than off. I think you would set yourself even more apart and important if you do videos on grinders that focus on ease of finding grind settings. Maybe I have been torturing myself with the Eureka, and other grinders are precise and easy to change coffee types for espresso? I dont even drink drip, so I dont even change it a large amount. Decafe needs even lower setting for espresso.

    I'd love to print out a vernier for my opus after a stepless mod but don't know where to start with measurements or how to get an accurate print when i find the measurements. any chance of producing a printable image for the opus in the future?

    The tool shown for making the paper filters is the EK Success (sometimes shown as EK Tools) 2.25 inch punch. This tool cuts a perfect size circle for a standard 58mm portafilter basket. Unfortunately the product does not last. I ordered one from Amazon and it wouldn't work out of the box. Amazon sent a replacement that worked okay for a few hundred filters then rapidly stopped cutting a complete circle. I tried all the sharpening tricks including taking it to a knife sharpening professional with no improvement. I ended up contacting the manufacturer who provided me with a full refund. They claim it is not compatible for cutting filter paper.

    One of the problems I face is removing puck screen before releasing puck itself. I often drop it in knock box still stuck to the puck, which is super hot. From workflow pov, it's a fail. I was looking for some tool which will extract puck screen only. Then I can use ejector tool or knock box separately.

    What you're making there isn't even espresso. It's more akin to an aeropress brew, but if you prefer this kind of taste, you don't need the 1000 plus dollar equipment, you just need a 30 dollar aeropress 😂

    ...and what if you would use a convex tamper for the "beautiful" arranged shot? that could compensate the uneven extraction, because the puck would be formed evenly across the whole surface and depth.... no sour edges, no bitter middle part

    Great job - thx a lot! it confirms my experiences (with .25, .30 -by Normcore v2.1 and v3.0- and a smaller no name .40 ). I choose the .40 especially for super fine espresso "powder", because even the .35 are bending, so that I have the feeling to have less direct control over the movements

    th for the interesting comparison... its the grinder, stupid;-)). as in the HiFi business: a solid tube amp can subjectively taste, pardon: sound, better - even if the metrics of a higthech bolide look better. additionally: I don't like that kind of over-engineered machinery, its not the same as "making" (literally) a classic espresso more manually...

      @@mack6861 too many reassons: lack of transparency and information- as in you order something and get a new revision that is different from what your friend got 6 -12 months ago lack of competition for him- so he can do whatever he wants with prices or quality he is not pushed or threaten by anyone -fraud at selling packages that are not worth a lolly - he declares all his packages 10-20$ so he is committing a fraud- again if you sell 100 burr sets at 300$ a piece= 30000$ his burrs are tested on cow manure beans in mazzer grinders ssp burrs in general- specially the so called unimodal/high uniformity (64mp,64brew, 83mp/98hu/98lu/98 brew) produce a punchy acidity drink with the lack of balance (attributes like sweetness and body are reduced) and you end up with an uppercut acidity bomb in your face with 1 main fruit followed by either a steep no aftertaste as in lacking, or by a prickled cardboard dryness. So in my opinion not worth the time, the money. I owned more than 5 ssp burr sets in 64-73-98mm size and borrowed or tried other grinders with them. No thank you, next.

    Didn't love the SSP Cast burrs either, it seemed like it turned my nice grinder into a low end conical burr grinder. But I've recently found even an actual lower end, but decent conical burr grinder CAN do better if you're not looking for super high clarity, it's nice to have both options if you have multiple grinders and enjoy a variety of different coffees and brew methods. Conicals can be pretty high clarity too! and flats can be LOW clarity, so don't stereotype your burrs people! :D

    My influencer. <3 Hey, me and my grinder got a shoutout! One small tip that's not mentioned: If you can align the upper burr with the touch point to be roughly zero on the grind adjustment ring your grinder markings might make a little more sense. Also, the grind adjustment mechanism can top and bottom out, so being somewhere in the middle is probably a good thing.

    Been using Chemex square filters and the NT-Circle Cutter to cut out 54mm IMS basket paper filters.... The NT Circle cutter is a much better experience cutting circles because your not limited to a specific size like a punch and i make puck paper for both bottom and top of the IMS 18-21g baskets the top to use to keep the group head clean.

    What is the reason for shimming the stationary burr after aligning the rotating burr and getting a perfect wipe?

      The perfect wipe is only from the highest point in the stationary burr touching the surface of the rotating burr. He is then attempting to level the stationary burr afterwards by shimming it to avoid any unevenness from the cast part which may mean the burr doesn't sit perfectly flat when screwed down

    Using the same dose of grinds for all thicknesses doesn't show the differences. The grinds were first fluffed up by the 0.25, then the other sets simply cut through the work that the thinner pins did. Each set of sizes should have had there own freshly ground beans to prep. Still appreciate the time you put into this👍👍
