Chicken Alfredo Lasagna Soup
This gem of a soup is one you will want to make all winter long, if not all year. It's so easy, quick, and bursting with flavor, you will be the hero at dinner time for sure, and not even break a sweat. I hope you give this recipe a try, and thank you for stopping by for a visit. Have an amazing day, love you all so much.
Ingredients:
1-8oz package, 227g of softened cream cheese
1Tbl, 15ml of olive oil
1Tbl, 14g of unsalted butter
1/2 medium onion chopped, about 94g
4 cloves of minced garlic, about 13g
1-8oz, 227g package of sliced mushrooms, Cremini or button
1/4tsp, .5g of Italian seasoning
3Tbl, 27g of all-purpose flour
6c, 1-1/2ltr of chicken broth
1c, 240ml of heavy cream
10 lasagna noodles broken into bite size pieces
2c, 300g of cooked shredded chicken, your choice of meat light, dark, mix of both.
1c, 100g of grated parmesan
2c, 162g of baby spinach
salt and pepper to taste, I use a 1/2tsp, 2g of each
Instructions:
1) In a Dutch oven or stock pot heat oil and butter over medium high heat. Once butter has melted add onion and cook till softened. Then add Garlic and cook about 30 seconds longer (Till fragrant).
2) Add mushrooms and Italian seasoning, cook till mushrooms cooked down, then add flour and cook for an additional minute or two, till the flour is no longer white.
3) Stir in 2c, 480ml of the chicken broth, and continue to stir till the flour is completely smooth, no lumps. Then add remaining broth to pot.
4) Add heavy cream and lasagna noodles to the pot, bring to a boil, then down to a simmer cover with the lid, leaving a small gap. Simmer for 20 minutes stirring occasionally so noodles don't stick to the bottom.
5) Add chicken and cream cheese into pot and stir till cream cheese is melted (cut cream cheese into small block before putting in the pot).
6) Once cream cheese is melted add parmesan and spinach to the pot, continue to cook and stir till parm is melted, and spinach is wilted down.
7) Cook till desired thickness is achieved, serve, and enjoy

I always try to keep a good variety of different beans on the shelf. They are so much better than buying all those cans, and so much cheaper, and no added junk in them. It is great to be able to make Great Northern Ham & beans with cornbread in under an hour instead of needing 2 or 3 hours to make the dish. Love the convenience of it. And the cost of dry beans, for 2 pounds is about 3 or 4 bucks, and you end up with 10 pints (each can from the store is between 1 & 2 bucks a can) is a fantastic savings! I can't remember when I purchased a can of beans at the store since I learned this. These jars look fabulous! And I LOVE seeing the bubbles too. Thanks for posting!
@@BinfordMJ I've been canning for ever now, and I will still keep a few just in case cans from the store, but when I saw the chemicals being put in the beans I was like nope. I just added them to the list. Beans are so easy to do 😊❤️
Grew up w/a mom canning. She used a pressure scanner; I never liked the noise it made and used a cold water bath successfully. Best advice is buy a canning book. I always had a jillion questions about every step. Enjoyed your thoroughness. 31:57

Mr. Smith, thank you. I love canning. I have kept my jars for up to 10 years. They are still good. The only problem I have had is canning broccoli soup.

Oh heck yeah, brother. I'm going to have to give this a go. We love the classic meatloaf. This is a fun twist on it. I also love meatloaf sandwiches so if you had leftovers, you need to report back on the sandwich. The classic meatloaf, cold, thinly sliced with some yellow mustard is one of my favorite sandwiches.
@@mikeybeeee07 I do love a classic meatloaf also, the sandwiches the next day were out of this world. I did a lightly roasted bun, and piled the onions on top 😊❤️

In order to keep bars firm when OUT of refrigerator do this...........keep stirring at the end and use a candy Thermometer. Keep stirring on lower heat till thermometer reaches 275 degrees which is called "Soft Crack". At that point pour out as you normally do, smooth out and cover with the peanuts as you did making sure to push them in a lot. Cool on counter and then refrigerate for a couple of hours. Take them out and cut in sizes on cutting board. You won't have to store back in refrig and they will keep there nice shape just like the store bought Paydays......enjoy

I grew up in the 60's and my Mom made a lot of jello desserts. My favorite is made with small packets of lemon and lime jello., crushed pineapple drained and cream cheese. Jello is made up with a cup total of water less than both boxes call for. Drain pineapple well and save juice. For topping use cream cheese and add pineapple juice to make smooth consistency. After jello and crushed pineapple is hardened in refrigerator smooth cream cheese mixture over the top and cut out and serve. I was never a favorite of savory jello dishes but the sweet jello dishes I loved then and now..
@@jaynecoin9805 the lemon and lime recipe sounds really good 😊, we had jello as kids but it was always just the jello. Every once in a while my mom would put a fruit cocktail in it, but most of the time it was plain. It's like I've found a whole world of ideas with jello 😂❤️

I have that tshirt ❤ I make sloppy Joe's with ground beef or deer, catsup, honey mustard, BBQ sauce then I add either frozen or canned corn and I serve most times open faced. Would be interesting the mexi-way.. I don't use seed oils, very inflammatory! Avocado or olive oil even coconut maybe. I'd probably use butter or lard/tallow. Many blessings!
@@lablover1972 I love deer meat, and your sloppy joes sound amazing, I'm trying to get away from seed oils, I had heard a report about sesame oil, and all the bad things it was doing. Hope you had a great new year ☺️❤️
Yes all vegetable oil and see oils are bad news bears, and almost ALL are rancid but have been processed just so that you cannot smell it. I use olive, avocado, or coconut when I need to. Otherwise, it's lard, tallow, and butter/gee for cooking and baking. Sometimes, I will spritz in some avocado or olive oil in my pan. Look forward to many more of your videos!
@lablover1972 I agree ☺️❤️

Coffee in shoofly pie? I don’t think so. I’ve never heard someone do that. No shoofly pie has coffee in it.
@@AdventistHomemaker thank you for stopping by, it does sound strange to put it in, but you really can't taste the coffee, it is in there to just enhance the other flavors 🙂❤️
Actually it's a regional thing. We are in an area that is heavy with Pennsylvania Dutch ancestry and it's something they do. It's actually quite nice because the bitterness of the coffee balances out the overly sweetness of the molasses. You do not taste the coffee at all. I see you are from PA. I'm surprised you haven't run across this before. Always something to give a try. 😊
