For the Chicken Masala:
Chicken - 1 kg (cut into pieces) 🍗
Potatoes - 3 medium (peeled and cut into halves) 🥔
Onions - 2 large (sliced) 🧅
Tomatoes - 2 large (chopped) 🍅
Ginger-Garlic Paste - 1 tbsp 🧄
Yogurt - ½ cup 🥛
Green Chilies - 3-4 (slit) 🌶️
Fresh Coriander - ½ cup (chopped) 🌿
Mint Leaves - ¼ cup (chopped) 🌿
Lemon Juice - 2 tbsp 🍋
Oil/Ghee - ½ cup 🛢️
Salt - to taste 🧂
Spices:
Biryani Masala - 2 tbsp 🌟
Red Chili Powder - 1 tsp 🌶️
Turmeric Powder - ½ tsp ✨
Coriander Powder - 1 tsp 🌿
Cumin Seeds - 1 tsp 🌾
Cloves - 4
Cardamom Pods - 2
Cinnamon Stick - 1 inch
Bay Leaf - 1
For the Rice:
Basmati Rice - 3 cups (soaked for 30 minutes) 🍚
Salt - 1 tbsp 🧂
Whole Spices (Cardamom, Cloves, Cinnamon, Bay Leaf) 🌿
Water - as needed 💧
For Garnishing:
Saffron Milk - ¼ cup (saffron soaked in warm milk) 🥛
Fried Onions - ½ cup 🧅✨
Ghee - 2 tbsp 🛢️
Boiled Eggs (Optional) - for serving 🥚

Instructions
Step 1: Prepare the Chicken Masala
1. Heat oil/ghee in a large pan. Add sliced onions and fry until golden brown. Remove half for garnishing. 🧅✨
2. Add ginger-garlic paste and sauté for a minute until fragrant. 🥄🔥
3. Add chicken pieces and cook until they change color. 🍗🔄
4. Mix in tomatoes, green chilies, yogurt, and all the dry spices. Cook until the oil separates. 🍅🌿
5. Add potatoes and mix well. Cover and cook until the chicken and potatoes are tender. 🥔🍗
6. Add lemon juice, fresh coriander, and mint leaves. Stir well and set aside. 🍋🌿
Step 2: Prepare the Rice
1. In a large pot, boil water with salt and whole spices. 🍚💦
2. Add soaked rice and cook until 70% done (the grains should still be slightly firm). Drain and set aside. 🌾✨
Step 3: Layering the Biryani
1. In a deep pot, spread a layer of chicken masala at the bottom. 🍗🔥
2. Add a layer of half-cooked rice on top. 🍚
3. Sprinkle fried onions, saffron milk, and ghee. Repeat the layering. 🧅🥛
4. Cover the pot with a tight lid and cook on low heat (dum) for 20-25 minutes until the rice is fully cooked and flavors are infused. 🔥🍲
Step 4: Serve & Enjoy!
1. Gently mix the layers before serving to combine flavors. 🥄💛
