This Creamy Chickpea & Potato Delight is a wholesome, flavorful one-pan dish that brings together the earthiness of potatoes, the hearty goodness of chickpeas, and the vibrant richness of a spiced tomato sauce. Perfectly balanced with the warmth of paprika and turmeric, the dish is finished with a touch of cream for a luscious texture and garnished with fresh parsley for a burst of freshness. Ingredients
3 medium potatoes, diced 🥔
2 medium onions, chopped 🧅
7 garlic cloves, minced 🧄
1/2 teaspoon salt
2 teaspoons paprika powder
1 teaspoon garlic powder
1 tablespoon turmeric
1 teaspoon red cherry powder (or mild chili powder 🌶️)
30 grams parsley, chopped (reserve some for garnish) 🌿
2 cans (390 g each) canned chickpeas, drained and rinsed
1 packet (390 g) of tomato sauce 🍅
3 tablespoons cream 🥛

Instructions
Prepare the Base:
Heat a large pan over medium heat. Add a drizzle of oil, then sauté the chopped onions until translucent and soft. Add the minced garlic and stir for about a minute until aromatic.
Cook the Potatoes:
Add the diced potatoes to the pan. Stir occasionally, letting them soften slightly, about 5 minutes.
Incorporate the Spices:
Sprinkle the salt, paprika, garlic powder, turmeric, and red cherry powder over the potatoes. Stir well to coat everything evenly with the aromatic spices.
Add Chickpeas and Tomato Sauce:
Pour in the canned chickpeas, followed by the tomato sauce and 120 ml of water. Mix everything thoroughly to combine the flavors.
Simmer and Cook:
Cover the pan, reduce the heat to low, and let the dish simmer for 15-20 minutes, stirring occasionally. The potatoes should become tender, and the sauce should thicken slightly.
Finish with Cream and Parsley:
Stir in the cream and 20 grams of chopped parsley, saving a bit for garnish. Let the dish simmer uncovered for an additional 3-5 minutes to blend the flavors.
Serve and Enjoy:

Once the oil is hot, add the diced potatoes. Sprinkle with a pinch of salt and cook for about 10-12 minutes, stirring occasionally, until the potatoes are golden and crispy on the outside but soft on the inside. Add the Veggies: In the same pan, add another tablespoon of oil if needed. Toss in the chopped onion and bell pepper. Sauté for 5-7 minutes until they soften and start to caramelize slightly, giving a sweet depth of flavor to the dish.
