Pork chops reverse seared like a steak? OH YES!
We took tomahawk pork chops, smoked them on the Weber Searwood XL 600 until they were good and smoky, and then seared them at 600 degrees on the Searwood's sear grate. They came out super juicy, salty, tender, and excellent. It wasn't easy though, because the Searwood had a hiccup in the middle of the smoke. Thankfully we were able to salvage the cook and the end result, while it took longer than expected, was fantastic.

Alabama White Sauce Recipe
1 1/4 Cups Mayo (Duke's of course!)
3/4 Cup Distilled White Vinegar
1 Tbsp Black Pepper
1 1/4 tsp Kosher Salt
1 tsp sugar
1 Squeeze of Half a Lemon
1 tsp Worcestershire Sauce
Hot Sauce to Taste
Mix in a bowl and serve.

Question: I have this same grill set up with a griddle non XL version. I’ve tried to cook like you’ve been doing on manual mode 10 and my eyes burn so bad from the smoke that I’m crying every time I step up to the grill. You don’t mention it bothering you at all. Is this something you experience?
It definitely gets hot and I have to stand back but I haven’t experienced eyes burning. What pellets?
@@TBH-Grillin I’ve used 2 different ones. Bear Mountain Gourmet Blend and Trager Cherry. Both of them get aggressively smoky when on 7-10 or 350+.
@@nicholasstalvey9660 nothing unusual there. I do wear contacts so maybe they shield my eyeballs from tearing up in the smoke 😂
I think these pellets suck, i cant keep them lit they seem to be damp and I've tried to microwave them to no avail. I have to mix them with my other pellets 3 to 1

Did you try the app to change settings before yanking the plug?
I did, there was no response from the controller. I kept it out of the video for the sake of brevity.
Random question… have you ever had ambient temperature issues on your Searwood? I noticed for my Searwood, most of my cooks took wayyy longer than they should so I bought an ambient thermometer and it was ready close to 50 degrees off. So when I set something for 250 it’s reading 200. I’ve reached out to Webber and I haven’t heard back from them.
I haven’t had that problem but I haven’t been paying close attention to it, haven’t been using an ambient thermometer outside of the built in one. I’ll check it out and let you know.

Have you ever tried Knotty Wood brand pellets? If not, I suggest you check them out. They have a variety of good pellets, i.e. Almond wood, Plum wood and others. I'm liken' your videos. Just came across your channel and immediately became a subcriber! I just sold my Grilla OG am thinking about purchasing Searwood or a Camp Chef. Torn between the two.
Someone mentioned them but I haven’t tried them yet. Sounds like I need to! Thanks for subscribing! Regarding the new grill, the searwood is great but if the CC you are thinking of getting is the one with the built-in smokebox, it would be a real tough decision for me. That’s a really nice addition. However, does the CC also have rotisserie and griddle options? I love that about the SW.
@@TBH-Grillin You can use Cameron's "The Flip Professional Smoke Box" in the Searwood, problem solved? No rotisserie adapable to the CC. I'd rather have the rotisserie option 🐓 than the smokebox. Think my mind is made up.

I tried royal oak on accident... ran out of my normal charcoal for a brisket. One basket of royal kept my smoker at a steafy 225° for 10 straight... will be using it again.
You won’t get as much smoke at consistent temps, but it’ll keep the heat!

@TBH-Grillin have them tested for a full spectrum analysis. There will be lots of unwanted. I used to do pellet smoking but there is no regulation on it . I went back to real wood only .
Did you ever find out why your smoker shut itself off?? It's always great when a cook turns out so well, you can see it on your face.
Haha, thanks. Yes I was happy. No, I never did, other than we had a brown out a week later that interrupted a cook. But on that occasion the clocks were blinking. So I’m still not sure why it stopped that one night. But it hasn’t happened again so, just one of those things 🤷🏻♂️

Waiting for a Searwood 600XL and I’ve got a question for you. How often do you use your 600? A rep told us that it’s not recommended to use it everyday? I plan to use mine a lot and didn’t realize it was a grill that shouldn’t be used everyday. I won’t use it everyday but I’ll be using it a lot.
Wow that’s a strange statement from the rep. I use it all the time. 3, 4, 5 times a week. No issues whatsoever. Just empty the ash/grease catch and the flame diffuser every 3 cooks or so. Eventually the glow plug will go bad and the more it’s used the faster that will happen, but that’s $25 and 5 minutes to replace yourself. It’s like changing the wiper blades on your car every so often…

If you want to smoke something, use WOOD. If you want to grill something, use charcoal!
@@billmckee3639 while I agree with you in principle, have you ever used a bullet smoker with straight charcoal? Comes out amazing even without the wood.
Can you mix the two?
To get a longer smoke, maybe put the ground beef balls in the freezer for a few minutes before popping them on the smoker so it takes longer to get to your desired temp.

For high heat applications like these burgers, I would definitely not use Smokin’ Pecan pellets…seems to me like that would be a waste of money since those are so expensive. That’s just me…
You may be right, but we had to smoke the burgers too and didn't want to keep switching back and forth. Also, we'll be doing a video on the efficiencies of smokin' pecan vs traditional pellets soon, to see what the real cost difference is. Should be interesting!

No, it’s straight across. I will say that it bends down slightly in the middle.
You should do a tri trip like a brisket. It's so much better than brisket. Taste like brisket with more of a steak flavor
Have plans to do that as a matter of fact but I am skeptical about it being better than brisket which is my second love
@TBH-Grillin I like steak more than brisket. That's probably why I think it tastes better cause it is a more steak flavor than roast flavor
Reverse sear on the Searwood top shelf at 250 until 130 internal and 600 degree sear on bottom rack LH side to finish - thank me later.
Dont know if you have a papa Murphys pizza. Have try a take and bake and you have use oak pellets. Gives it a wood oven taste. That's just a quick cook for the family.

Do you want some more real wood smoke flavor? Another trick I will do is put a few wood chips, or chunks of hickory are mesquite wood on top of the heat diffuser before i would start up my grill. It's just enough heat to get the wood to smoke. Did this all time on my recteq
