Thanksgiving UPGRADE With This Juicy Smoked Turkey Breast!
Continuing with the Thanksgiving theme, this week we try our hand at smoked turkey breast on the Weber Searwood. One breast is going Texas style, wrapped in foil with butter and stock at 120 degrees. The other breast gets an inject prior to going on the smoker, but is not wrapped during the cook. Which is better?     Getting them already de-boned would be nice, doing it yoursel is time consuming, and possibly not as pretty. But I always look at it as the more you have someone else do something for you, the more you pay. You did a fantastic job de-boning those breasts, saved money, and learned how to do it. You can only improve and get better from here on out. I try to quarter whole chickens and it looks like I used either a chainsaw or dynamite when I'm done, but I try to learn, have fun, and bottom line, it may not look pretty, but it tastes great, even when wearing a blindfold. 😂 P.S. don't throw the skin away..... fry it like bacon in a bit of oil in a skillet until crispy. Then throw it on top of a burger. Yeah buddy, that's good stuff. 👍 And yet another P.S. I'll risk getting my ass clobbered over this, so please be forgiving, but for turkey sandwiches......it's Miracle Whip for me. 🤫

      Hmm. Did you blast them at 500 towards the end? We’ve had good luck with that. Also, did you dry them off before applying oil?

      Excellent. I use it 4 days a week. Couple small hiccups, which is to be expected for how much I use it, but it’s been a beast.

      @@tnc4696 Once it shut down during an overnight cook with no explanation. When I turned it back on it had to go through its “invalid shutdown” cycle. Maybe we had a power outage or brown out, but none of my clocks were affected. Hasn’t happened again. One time the controller became unresponsive. Reboot (unplug/plug back in) fixed it. Recently changed the glow plug, which is normal given how much I use it. Since I use this thing constantly and electronics will always have a glitch at some point, I consider these occurrences very minor. I’m not biased here. My experience with the searwood’s older brother (SmokeFire EX6) was awful.

      @TBH-Grillin should do a bone in ham like a pulled pork for the holidays. Smoke it in an aluminum roasting pan to hold all the juices. Wrap around 155-160 and then take till probe tender. Shredded and then add you juices back in.

    man, you might consider looking up the hazards of seed oils. much better to use real butter in a spray bottle. add a bit of salt. just nuke the butter and then pour it in the spray bottle. u can save any excess and just put the bottle in a cup of hot water to remelt. can use ghee if you prefer. movie theater butter is actually a mix of veg and canola oil and better purposed for lubricating machinery than ingesting it. can also use tallow or lard if u prefer. would be some interesting flavors.

      Yep, the spatchcock took 1 hour 50 minutes at 300 degrees and was the best of the three. We were as surprised as you!

      @@soumynonareverse7807 Well the rotisserie one was stuffed with celery, carrots, and herbs. It wouldn't really be possible to stuff the fried one, I don't think. I would say, the rotisserie one was also VERY GOOD, but the spatchcock was on another level for some reason. As you saw, we injected both of them and the juiciness was fantastic. Can't really go wrong with either version. I know one thing, dry oven-roasted Thanksgiving turkey is a thing of the past for me.

      Generally, the purpose of wrapping is to get past "the stall" faster. The one drawback is that it steams the bark while in the wrap. I like the bark to stay crusty, so if I have the time to just let the stall work itself out over time, I do that. If want to avoid the extra hours it takes to get through the stall, I will wrap.

      Once you wrap in foil then it doesn't matter if the heat comes from an oven or a smoker, just a waste of wood at that point. I don't normally wrap in foil, but if I do I shut the smoker down and switch to the oven since smoke doesn't penetrate foil anyways.

    Thanks for making this. I was planning to rotisserie a turkey this year, so this is good info. I've got a suggestion for a future video: prime rib on the rotisserie with Yorkshire Pudding. I had Yorkshire Pudding for the first time last year. It's like a savory pancake made with the fat drippings from the prime rib.

    on your searwood....do you empty out the pellets after every cook? Have my first pellet smoker on the way and wondering if the moisture would get to them if you dont empty it and store in a bucket or something

      I do not empty my pellets after each cook, and haven't had a problem in that regard. Then again, I use it all the time so pellets never stay in the hopper that long.

      I have one pizza stone at the moment, but it's not big enough for the size of these take-and-bake pizzas from harris teeter, so I used the larger pizza pans. They work great!

    I had the same thing happen and found that the main temp probe was pretty dirty (covered in black burnt grease and soot). So cleaned it off with some BBQ wipes and have never had it happen again. Now I check and wipe down the probe regularly. Great video, btw - going to try this.
