    I have a 22” Kettle and a 22” Smokey Mountain. If I had started out with a 26” Kettle I would have never bought the WSM.

    I've tried voodoo on chicken, and it was way too salty. I prefer voodoo on larger cuts of meat (pork butt, brisket) because of the amount of salt. I dont care for it on any other cuts of meat. Just my opinion.

    This box is great. It’s not supposed to have air flow because it’s designed to burn coal at a low temp over time. I use this in The Judge. It keeps one chimneys worth of coal burning at 250 for over 4 hours. Essential if you’re doing slow and low cooks on a coal grill and you don’t want to tend to your fire every 45 minutes.

    As a Texan who is well versed in low and slow cooking, I must correct you on one thing. The Texas crutch is not a lighting device. The TX crutch is when a brisket hits the stall, and you wrap it in foil. I do like the torch, but I’d probably light my house on fire by accident 😂

    What temp was it at when you pulled it off the smoker? Was your goal not to do pulled pork? A properly cooked butt should shred when pulled.

    I have my rambler now for year and half. Love the little guy! Amazing grill/smoker for the money. I smoke briskets and ribs on it ( small of course ) but I can do a decent smoke for 6 hours on a rambler and it works awesome as a grill! I paid around $300 for it and it is well worth it

    The reason the SNS does not work with the temperature gauge is that the Kettle comes with charcoal baskets and put them on either side of the kettle with the protein in the middle (indirect cooking). Then the protein is in the middle with the thermometer which should give a more accurate reading.

    I’ve ran into the same thing from some of the steaks I get from the local butcher. It’s like they cook differently and sometimes I feel like they’re overcooked, but they’re not. I don’t know it’s weird.! I’m really tempted to get a smaller grill so I don’t have to light up the judge every time. Also respect that you don’t drink and even though it look like you were drinking a beer, you’re not ashamed to say it wasn’t alcoholic! I haven’t drank since 2011ish!

      Glad to know it's just not me. It did turn pink after 10 minutes when it was cooled down. I think the meat must have been in shock or something weird like that from the direct hot heat.

    I can't make up my mind if I want to buy the judge or the longhorn smoker. Which one would you choose and why? I've never used a smoker before or have eaten anything that was cooked in a smoker so I don't know. I definitely would like to learn how to smoke a brisket or a lamb or even a fish, But mostly I would like to use it for everyday cooking, like steak, chicken sausage... I already have a Blackstone griddle so I only have room for 1 more toy, but I can't make up my mind. PS. I have lots of wood stored up from my oak tree that I cut down in front of my house and I want to use it.

      That’s a tough decision but I have guidance for you… The Judge is a great, fun and versatile BBQ that is unique and extremely well built. The Offset Longhorn will produce the ultimate flavor and is what the competitors use. It can do everything the Judge can do plus use split longs. Downside to an offset is it takes a lot of time and dedication to consistently tend to the fire so you’re only producing clean smoke and constant temperatures. Master the Offset and you are a Pit Master! And you have all that free fuel.

    Today (6-8-2024), this grill is priced anywhere from $1,600.00 to $1,850.00... wayyyyyyyyyyyyyyyyyyyyyyyyyyyy too high!! I'd say $350.00 would be enough. It's big but if a person wanted to spend scratching $2,000.00, the "Weber Summit Kamado" would be a much better purchase. Currently, that's priced from $1,249.00 to $2,149.00. This thing is certainly a "ranch" grill (fit perfectly in Montana) but it's wayyyyyyyy overpriced! No thermometer? The kettle looks big and heavy; the frame appears to be built heavy; I suppose the wheels are plastic. Do you think a person could put a smaller diameter charcoal grate in there to lower the coals? Would that work? Maybe put a 26" or a 24" or a 22" or something to lower it? It would take 200 lbs. of charcoal to cover the charcoal grate! LOL! I'm hoping that you stole this for $150.00... I'm hopeful! Gotta get a good deal once in a while. :)

      That's quite the dilemma you have. ;) I have both of these BBQs and they both are awesome. The Judge is fun and different, I really like the front door and raising charcoal basket, as well as how well built it is. But the Longhorn; It can cook everything the Judge can, hot and fast using the firebox. Including offset smoking with split logs. The BEST BBQ comes from an Offset as you get that true wood fire smoke flavor profile. Since you have all that free wood at your disposal, I recommend getting the Longhorn. Master that, and you will master BBQ!.

      In the area you can store a longhorn, you could park a weber 22" kettle, an 18" pit barrel cooker and a WSM If you can only get one more toy, to cook steak and chicken etc try looking at a kamado If you want to learn to smoke more than grill the Oklahoma Joe Bronco is hard to beat

    That is good lookin brisket! Bark also looks very good. I have several killer hogs rubs on my shelve but i just bought brisket and gonna smoke it on few days, im gonna season it with little KH ap seasoning and alot of that steak rub.

    Dont know if someone already mentioned it. But I had the same problem with their thermometer until I calibrated it with boiling water. Now its about 15-20° hotter on the OK JOE thermometer compared to digital one. Which is expected because its on top I suppose.🤷🏻‍♂️

    I ended up drilling holes all around the box and it still wasn't enough airflow. Also the seems on the corners started to separate on my box. I thought it was going to be a good purchase, but it turned out to be completely unnecessary for my Judge.

      Thanks for reporting that! Yea no smoker box needed for the Judge! What the heck were they thinking about when they made this junk.

      @GobbaGooBBQ Sad oklahoma joe is still selling it. They're hurting themselves in the name of money. I've always liked them as a company and never even thought to buy a chargriller, but their XD offset is looking better than oklahoma joe.
