HOMEMADE BACON FROM PORK BELLY!
Today we are making one of the greatest meats you can eat! We are making home made smoked bacon from a pork belly! This is the "EQ" equilibrium style bacon. It takes just about all of the guess work out of making great bacon. You will need a scale that can measure in grams as well as an EQ calculator. The EQ calculator I used can be found on makinbacon.net. This is what bacon experts would call "hot smoked bacon". Be careful with weighing and using the pink salt "prague poweder #1" as this stuff is not a salt replacement and too much of it can be bad. Try this, and you won't want to go back to store bought bacon again!

The added wood chunks really set it apart from any other pellet grill/smoker. I never imagined how delicious this could be! It's an extremely easy recipe and hard to screw up. I really appreciate that, thank you so much! I’ll be working on a temperature video soon, seems to be a lot of comments online that it runs about 20 degrees lower than what it says… so that’ll be interesting to see!
You made as well just buy bacon. The pink salt has red dye in it. Let that make sense
You’re absolutely right and I agree with you and hate the dyes, but the amount of curing salt you need to use is extremely tiny, so to me it’s worth the satisfaction of making it myself vs buying it at the store.

Looks great, I guess you have had the smoker for a while now. How is it holing up? I want to buy an xxl pro but I’ve been holing off cause of the mixed reviews
It produces amazing results. No questions there. I love all the space, I love that it’s a more true smoker as opposed to a pellet grill. I had to have the main door handle replaced, Camp Chef shipped it out free of charge so there’s that. Beyond that I haven’t had any troubles with my unit since the original shipping damage.
Thank you for the update. I have be been waiting for camp chef to correct the issues with them before I pull the trigger on one. I definitely want a true dedicated smoker and the camp chef certainly will not break the bank.
The shipping issue is a crapshoot. Might want to try a local retailer to avoid. Someone else commented on my video having so many shipping damage issues that they finally shipped it to him freight. I am going to do a test of the temperature variance issue that everyone talks about soon

Honestly I love the smoker! I will usually let it rest for hours in a cooler! Life gets in the way though and sometimes you just gotta slice it straight off the smoker! 🙂

i have the older model xxl. is the newer model worth the money to get a more authentic smoke flavor and ring or should i save up for a offset smoker?
I can’t speak for the XXL, but the difference between this and a typical pellet grill is night and day. I just made some jerky and it is incredible how much more smoky flavor you get. You can’t beat it in terms of convenience as compared to an offset smoker!
