    Great video. At the beginning, did you do an inventory of everything you had in stock? I'm curious if you are finding you are depleting your stock, or increasing it? ( I know the composition of your stock will change over time)

    I was just thinking if that meat was going to have to last me a week I would have made things that would have stretched it more. I would have cut the pieces of meat chunks in half and separated the amount in half. Then I would have bought vegetables to make a pot of vegetable beef soup( carrots, potatoes, celery, onions, corn, peas, butter beans, green beans, okra. Some beef bouillon if didn’t have it, pasta. A bag of white dried beans and red beans. Do you have flour, sugar cornmeal? These items along with seasonings? These items along with pasta and rice helps to bulk up meals. I would have also made a beef stew by making a nice dark roux with your butter and a touch of oil, then added in my beef bits, some carrots and potato cut into nice bite size pieces, along with some sliced celery and onion. Then served it over rice with some homemade cornbread to go with each of these dishes. Did you know people eat cornbread with molasses or sorghum over hot buttered cornbread for breakfast? Rice can be eaten for every meal, any vegetable that was not used up can be frozen for a later date. Potatoes are one of the best bang for the buck. So many things you can do with this vegetable. I know you are diabetic, but if you can have ice cream you can have a potato once in a while too…also the rice( brown). Everything in moderation and spaced out. The vegetable beef soup can be frozen or just do not make a large bunch. This way you have vegetables for other meals. The celery can be stuffed with the peanut butter for a snack. Wheat bread for a PB& J ( sugar free or made with just juice) sandwich. A grilled cheese and homemade tomato soup or a cheap can of it doctored up. The white beans and pasta with a little tomato product for pasta a fagioli…Italian bean and pasta soup. Instead of having to dumpster dive…have you gone to your local DHS office to see if you qualify for an EBT card? Anyone struggling to put food on their table should qualify. It is worth checking into. I know some people just love the thrill of the hunt, but others do out of necessity. I hope I didn’t upset anyone, but a lot of people just do not know about things. 😌

      @@nancyculp6968 Thanks for your comment.I don't qualify for assistance, and I dumpster dive for many reasons. Truly I am not in a desperate circumstance, I just have a lot of debt to pay down. I had other sources of protein as well as the steak. I know some things I make won't last a week, and also surprised some things last more than a week. I love soups and stews, but not in almost 100 degree weather. My focus was using the scapes. I do eat starchy carbs, but mindfully, as I don't currently take medication for my diabetes. As you said, keeping it stretched out. I like your ideas on the meals!

    Those prices are very low compared to my city (Wisconsin) supermarket. I had to look to see if this video was from 4-5 years ago. Eating is difficult when you live on Social Security and a pension that will never get larger. More power to you.

      @@cooneywi There are a lot of stores in my NY metro area, also a lot of people. Combined with places like Aldi and Lidl, along with living near areas with a lot of low income households (myself included), there's competition for consumers' dollars. Being near major shipping hubs probably also helps. I also compare prices via store apps . Since I was limited this week to Shoprite, I focused on their 3 day special sales, when many items drop in price compared to the rest of the week. The lettuce I got is normally $3.99-$4.99, but was $2.50 during the 3 day sale. Definitely a lot of math involved!

    don't put it on the farmer about the quality and type of food... we've been restricted to what seed that we can buy and plant. we've been restricted by how we can farm. we've been restricted by where we can farm. we've been restricted on when we can farm and use tractors and equipment. we've been restricted by the government, banks, insurance companies, college kids protesting in our fields about the "environment" we've been restricted to who and how we can sell our produce to (yeah, that's right, i can't sell food directly to the people who want to eat it and i can get in trouble if i give it away as well) ... the list goes on and on... a head of lettuce costs over $2.00 at the store and i get about 3 cents for that head of lettuce... where does the other $1.97 go?... feeding the billions and billions of people is a daily miracle (and it feels good to feed people, it's kinda doing God's work)... please stop making laws and rules that hurt the farmers who are helping to feed people..

    If you have any tomatoes going bad, just throw them out in yard for the wildlife and the seeds from the tomatoes will soak into the ground and start tomato plants.

    If your food store has a produce mark down cart or section go there for produce. They get rid of perfectly good produce by bagging and the price is usually $.99! Also you can make a good ham and white bean soup with dome of that ham. It goes a long way. Buy bags of dried beans because they are a good source of vitamin and go with just about everything.

    I look forward to your weekly challenge update. Your food choices and menu plan is never dull and boring. With prices rising almost weekly do you find it is more challenging to stick to your $25 budget for the items you have on your list or are you flexible and change options while you shop. I know I change options as I shop because I live on a fixed budget and for now don’t want to increase it. I also have a well stocked prepped type pantry which helps immensely. I stock up in pantry staples when they are “half price specials”.

      @@annea7526 For the most part I try to stick to my list, but have on occasion switched gears while shopping. That's when I have to decide what's most important for me - when possible,, I plan to have a balance leftover "just in case". Sometimes I swap out an item from my list, sometimes I pass on a "deal", and sometimes I decide to go overbudget. When the latter happens, I always carry the overage into the next week. The last year has definitely been more challenging in terms of staying within budget, but I'm determined to keep going through the end of 2024.

    Next time you make the corn muffins use some of the chedder you had and cut it into 1" cubes and push a cube into each uncooked muffin making sure the batter covers the cheese. Its one of my favorite treats.

      Thanks Kathryn! I do plan my weekly meals in advance and try for variety as much as possible. The 4 main meal components I strive for are protein, vegetables, leafy greens, and healthy fats. At some point I hope to do a video on how I plan my grocery lists.

      Excellent.. I marvel as I watch your food plan, shopping and budgeting each week how disciplined you are. Your prices are reasonable compared to our prices here in Australia. Those cherries for instance would be 7 - 10 times that price even in season and depending on where they were bought.

      @@annea7526 It helps that I live in a food oasis of sorts. The cherries were an unusual special find. The average price for them has been around $3.50/lb. I just happened upon them while shopping at the discount "farmers market" store. It's not close to me, but is close to one of my jobs, so I swing by there on the way home when I can because they do have some really good deals.

    Not me watching every single video on your channel today! Thank you so much for doing these videos. You inspired me to be even more frugal with shopping my pantry, fridge, and freezer first. In between watching I did get up and make the black bean salad from your last video and also ham salad using up what I already had in my refrigerator that was just going to eventually rot lol

    I just found your channel. Thank you for the black bean salad recipe. I have all the ingredients on hand. Also if you put a kitchen towel or a wet paper towel or napkin underneath your cutting board it won't slide around on the counter.

      Thanks for the tip! I was thinking I might have to invest in a cutting board that sticks to the counter top, but I will try the wet paper towel and hope I can save a few bucks.

    I would be very careful with the perishables when dumpster diving, some stuff is fine, but the unknown is how long something sat outside of a cooler where a customer may have dumped it, then when they find it it goes into the dumpster....so that bag of cheese, or say a gallon of milk or your chunk of salmon may have sat over in the produce section or cat food aisle for hours before an employee found it and disposed of it....I have had food poisoning three times and do NOT ever want it again so I will pass.....

      @@chrisfry436I understand dumpster food is gross to some people. It is also my reality - and I want to be transparent about how I manage on such a small budget. I've been dumpster diving for years, and am very careful with the items. I inspect everything thoroughly, cook well, and listen to my gut instinct. The salmon was found during the winter when outside temps were freezing, it was totally fine. The cheese was a gamble, but also turned out fine. I have never gotten sick from dumpster food.

    Great job! Do you find it hard to stay within the $25 a week? Do you find your stockpile is slowly increasing? My husband and I also eat for about $50 a week (Nova Scotia, Canada)

      @@kathryndockrey1477 It varies. Sometimes I have to forgo something in order to stay within the budget, sometimes I'll go over and make the next week's budget smaller. Right now I have a decent freezer stockpile so am holding off on buying certain items ( mostly meat) while I clear out some space using what I have. Kudos on your $50 budget for 2 people!

      @@elishatv3561 I did, for a full 24 hours, and they looked good to go, just didn't cook properly. Someone suggested that any acidity can hinder the cooking process. The recipe didn't call for the beans to be precooked, but moving forward I think I will always precook my beans.

    I always precook my beans when making any bean dish. Adding salt or tomato products really slows down the cooking especially with older beans. Another way would be if you have a pressure cooker or an Instant pot. I would just add some water to the hard beans and give them another go in the crockpot or the stove.

    Great Job, Girl! :) Add some water to the beans and cook them on the stove. They probably just didn't get up to temp in the crock pot.

      Actually, yes. Some months back during the winter a store dumped tons of them- they weren't expired, open, or recalled so I grabbed a few and popped them in my freezer. Sometimes stores toss perfectly good stuff to make room for new inventory.
