Nice but this is "afternoon tea", not "high tea." Sounds like "high" should describe a fancy formal tea, but it's actually the working man's "tea" with more savory food.

Hermosas y cuidadas presentaciones con ingredientes increíbles (lo único que no voy a entender es el uso de las bases de obleas que no suman nada, ni siquiera crocante a la hora de comer, son insípidas y si ya los sabores japoneses son muy delicados, con esto se pierde algo). Como con cada técnica se cuida el sabor y se cambian las texturas como cuando agrega hojas de shiso al caldo en la cacerola de cerámica para luego servirlo sumándole su aroma al dashi de la preparación.
