Lelit Mara X - upgrades, updates and lattes!
Sorry for the poor audio, but here's a little update on the setup! We have a new portafilter, precision basket and shower screen from IMS, although ever so slightly harder to dial in, a worthwhile upgrade! Additionally, we have the Mignon knockbox that goes under the Specialita which saves lots of counterspace and makes the setup that much more functional and compact :) I love it!
Also extending our thanks for all the subscribers who have joined, watched and commented on all the videos thus far! This is no large scale production, just a guy who enjoys making and sharing his coffee experience! I've loved reading the comments and replying to people and I look forward to all the conversations to come! See you all in the next one.

My not so new new espresso machine for home! It is my first time using a lever style machine and my first time pulling a shot at home instead of at the cafe. Definitely over extracted, maybe because of my low dosage (14g in 49mm portafilter) or maybe my grind setting. Open to any suggestions from any Lever Gurus! Thanks for watching.

Beautiful shot! How much were the mods you added to the La Pavoni? Gauges, heatsink, etc. Are those easy to find?
To get an early flavor check of the roasted beans, chew a couple of the fresh roasted beans you are weighing right now. Easy chewing, they will crack your teeth if you are not careful.
I noticed your lower adjustment nut on the piston rod is missing? Is this for any special purpose?

It was a long time ago, but I know I had an IMS precision basket, typically dosing around 12-18 grams I think. the PF itself I believe was from Etsy! lots of lathe craftsmen on that website that do really great machinework!
How did you change the angle on your steam wand? Did you replace the original?
Nope, it was an original arm to my knowledge! Some models have a different design, but mine was one that rotated, but would not come off. I know some millennium models could be removed and swapped with an auto frother or something.
Mara X v.1 has a pre-infusion in the mid lever position? My v.2 doesn't.
At the time, I think some water would exit the group, but these days I don't really know. I haven't been near my machine for a few years unfortunately :( maybe I misunderstood what pre-infusion was then.
Nice! How much time do you let the boiler heat before the shut??
If I remember correctly, about 10 minutes. I tried to do some warming of the group head too, not by flushing water through (as the boiler volume was so low) but using some of the residual steam/heat. I'd lift the lever just enough so the piston was up, but not letting water in, and that would help get some temperature in the group head. Basically, Pierre, there's no one correct way to use the machine, try new things out, see what works for you and what doesn't, but most importantly have fun! :)

@@pierregagnon5457 Glad to hear it :) I remember every morning was a totally different experience. I used to do micro felinis, that often yielded my favorite flavors. Again, it's all experimentation, just have fun with it!
Hi there! Well executed video. I am just starting with a pre millenial La Pavoni Professional. It would be nice if you could tell us where you got the grouphead manometer from, and especially the nice bottomless PF. Also, good point about grinding really fine. I find that with this machine, I need to grind a good amount finer than for my other espresso machines, to get noticeable resistance from the puck. Have a good one!
Hi Tom, unfortunately I sold my machine long ago now, a silly mistake on my part, but I needed to do so in order to fund the purchase of my E61 machine. I'm sure there are many places that sell La Pavoni parts, so which one is best really depends on your geographic location! As for accessories and wood accents, Etsy is also a good place to pick stuff up as there's lots of craftsmen doing la Pavoni parts there too! Sorry I couldn't specify, it's been a while and I don't remember unfortunately, but I wish you luck!

Where is all that steam coming from and what do you mean about setting 1 and 2
On my old machine here, there are two heat settings that adjust the wattage of the heating element. When you have it on setting 2, it would make the water boil, thus evaporating and creating high pressure steam.
I struggle to find the right grind size on my europiccola for decent espresso and nada
It is a constantly shifting scale! My suggestion is to change one variable at a time! so if its grind size you're struggling with, keep the dose identical each time until you find a grind size roughly in the range you're looking for. Then you can change another variable! Unfortunately, there is no "one size fits all" option for espresso, especially with the fussy lever machines :) just part of the fun
I stepped on the scale to weigh myself and it got my weight waaaaay wrong. Also it broke. I don't recommend it.

Ah, sorry to hear about your old machine! Was it the motor that died or something else went bad? In any case, I hope you enjoy! It's a pretty user friendly roaster, so I hope you get on well!
Please do this video again but this time showing the pressure gauge as well as the bottom of the filter and your hand on the leaver as you pull the shot. It will help me to improve me shot pulling.
Wish I could, but I sold my pavoni a while ago! Just aim for 9 bar and gradually decrease :) that worked well for me there are so many ways to use these machines, so my other suggestion is to just try what works for you and your beans!
Thanks but I don't have a pressure gauge on my group head. Thats why I wanted to see your gauge as you pulled your shot, so I could see what effort was needed to get to 9 bar. Thanks anyway, Tony
@@tonyb83 ah I understand, unfortunately everybody looks different depending on their size using these! A general rule is that it should be decently firm to push, but not so hard that you think you're gonna snap the group off!
@@alexwalshaw Thanks Alex. Unfortunately the La Pavoni pressure profiling kit is a bit expensive, so I think I'll try and find a pad to fit on the leaver which measures my hand pressure whilst pulling a shot and convert that to the pressure in the group head. Do you think that will work?

Was that a modded steam arm? Mine doesn't move at all and I hate the angle that it is stuck at! Cheers.
It was the original arm on my machine, but the tip is one I installed; a machined 1-hole steam tip for increased pressure and control. I think there were many design changes over the years, the most notable being the pre-millennium and post-millennium designs. I know the group head was widened by 2mm and some electronic changes, but maybe the wand was changed too. Have you looked over the joints on the steam arm to see if it's been over tightened? Everything on these machines are bolted together, so it could just be too tight or seized. If so, maybe try and loosen and lubricate the joints! Sorry I'm not a certified expert, but I hope some of my lent info will help!
@@alexwalshaw Thanks mate. Yeah, I just retired a pre-millenium Gaggia Factory (made by LP) and the steam arm swiveled. I now have a brand new LP Professional and the steam arm is completely static. There's no movement at all. Perhaps this is another one of the changes they made.
@@wingnoit I have this vague memory of watching a video of a newer LP and it seemed like the arm was completely removeable and replaceable with this auto foam contraption. If it was removable, it must be possible to disassemble and get it to swivel. It would be such a backwards step to remove that functionality, don't you think?
@@alexwalshaw Yeah, you can take the whole arm off, and yes you can rotate it if you remove a little screw ... But there is a hard stop built into it meaning you can't angle it any further down, only up (which is pointless). Ive taken it apart and tried to see if the stop can be moved but it doesn't seem to.
@@wingnoit very interesting. A bit of a backwards design change I guess, but going forward I suppose you may just need to find a good angle for your milk pitcher with the wand as is. To practice, I usually just put water in the pitcher so I can mess around and understand what angle gives me the best whirlpool! You may already do that, but in case you don't, give it a try so you can make due!
Great video. What is the temp of group head? Notice you have a heat sink. Do you have problem with over heating?
Glad you enjoyed. I think I had it around 70 or 80°C optimally. I would have it reach the 100° area or beyond at times, which I thought was a bit too hot for what I was going for, but I was usually making 2-3 shots max per session, so it wasn't common for me to exceed that number very often. Once the power was off, the temperature fell rather quickly, so in my use it was never thermally constrained.

The ONLY thing I don't like about the Pavonis; are how light they are, which makes them jump around on the kitchen bench when operated.

I use the same scale based on a recommendation from TH-camr Xris. Has been great, only wish it had a timer, but for the price it is fantastic. I just use my phone to time my shots. Eventually I'll splurge for a premium scale, but it is not a necessity due to this budget scale.
Yeah same here! I use my drip scape's timer because I'm too lazy to take my phone out, but yeah the phone works just fine if you have it handy. Since buying this scale, so many new budget scales from reputable companies have broken into the market, stuff like Normcore and Decent making some really great affordable scales. Maybe one day I'll upgrade too, but as it stands I've got everything I need from this setup!

Thanks for the comment Tony, making these videos was always a blast for me so I'm really glad your viewing pleasure is similar to mine. Unfortunately, I don't live near my roaster at the moment, there's a lot going on but someday soon I'd like to ship it to where I am so I can of course keep roasting my own coffee but also keep making videos, I miss it dearly. I can run you though my process for making the bean cooler, or bean sucker 3000 as we (in)appropriately named it haha The bucket and lid themselves are just from Home Depot, cheapest ones I could find, and I just used some simple snips to cut a hole roughly the diameter of the strainer from my kitchen, which I believe is an oxo one. The brands aren't really important, but I wanted to have a tightly woven strainer as to not let beans fall through to the bucket, but I actually started switching to a wider plastic strainer once the beans were cold as the larger holes (still not large enough for beans to fit through though) allowed me to massage the chaff off the beans before bagging. the bucket is hooked up to my shop-vac by just pressure fitting a coupler into the bucket, again the hole was made with snips. Almost like a comedian, you need good timing... and your delivery has it! I do have one of those buckets but have never seen a lid for it, so I need to go look for that. And I do have some tin snips, but I guess I didn't think that would work. Such a simple and elegant DIY solution you've come up with! No... actually it really SUCKS!!! Haha!! 1 year on, do you just skip the running water and just purge your grouphead and portafilter with the boiler water? Just seems like an easier way to me. Running 50-100mL of 96⁰C water seems to work for me. Added benefit is that you've caught the water in your vessel and pre-warmed that also.
So I can only comment on the last thing I used to do with this machine as I sold it some time ago unfortunately to upgrade :( I would lift the lever, not lettting any water out, and that would increase the group's temperature to the range I wanted it to be (75-85 C). I think that would either let some small amount of water into the group or steam from the boiler without actually flushing any liquid through. In terms of extraction, I would either do micro felini moves or just a straight pull depending on the coffee and dose I was using. If you see the newer videos, you'd see the new machine, a Lelit Mara X PL62X, which is a total workhorse for the home, but I can't help but feel sad for having to sell my Pavoni to get it.. so much character in the coffee that little machine would create.

considering the amount of machine you get for the money, I think it is one of the most cost effective prosumer roasters out there! Very similar to my Mara X; part of why I bought them is the ability to use them in a very small scale business scenario as well should I ever be able to manage that!!!

@@json8172 I've also seen people making bread makers into roasters. A seriously cool step up from popcorn machines as it is still hot air/fluid bed based!
@@alexwalshaw yah im aware - I got my popper on a speed controller, and can get some pretty darn good results for what I have. I can do about 1pound in a hour rotating between two popcorn poppers. Its ok for one person.

Hey Alex, do you feel like the original Lelit gasket caused any extraction issues? For example, do you have to lock it in all the way before pulling the lever?
I didn't experience any gasket related issues prior to replacing it, other than it being quite hard to lock in in the beginning, which is just the nature of a rubber seal vs a polyurethane one. I replaced it because I was modifying the group with an IMS shower screen and figured I might as well change it while I was in there. I don't expect anyone should have gasket related issues when it's new, or maybe even years into it's life, only when the gasket begins getting flaky, cracked or dry would I expect any sort of issues. Hope this helps 👍

Unfortunately I'm not sure of the cabinet specs :/ it's my father's house and I don't live there anymore. I'd maybe guess it's the US standard countertop height, maybe a standard cabinet height too if that exists.. but the person who built the house before us was kind of an idiot and nothing is level or standard there, so I really couldn't say. HOWEVER, when looking up the PL62X, this generation of the Mara, the specs of the machine are 22cm x 41cm x 35cm (width, depth, height). Please use those specs on your work surface and see if it's a good fit!

Great question, so traditional espresso shots from Italy would have used a dose similar to this, whether that is because the portafilters were small like this machine (49mm), compared to the current standard (58mm) or just the nature of that coffee culture had smaller doses, to my knowledge, a single is around 7-10g, which you can still make today even on a 58mm machine, but takes a lot of effort! Today's specialty coffee considers 18-20g a "double" and we go crazy and do some 25 gram maga shots too, but yes an original "Italian style" espresso (I guess haha) would be about 12-14 grams! In which mode are you in? Brew or steam priority?
Brew :) wanted to prioritize espresso temperature mostly, which does result in slightly less steaming pressure than that of a commercial machine, but nothing you can't compensate for with good technique

Found mine on eBay from someone based in Korea selling them. You can also buy direct from Kaldi on their website but be weary of the large cost of shipping as it'll ship from Korea I think.

I ordered my unit on eBay, but to my knowledge you can buy one from Kaldi directly, the shipping is the only thing to consider at that point as it's comes from Korea..

About 20-25 minutes. If you switch it on at the right time before your morning routine (if you have one), then it should be ready to go by the time you want to use it. :)

I'll give you a pro tip considering you have the roaster in a non-climate controlled area of the house; the starting temp and moisture level of the beans will vary from roast to roast too much to get consistantly results... which is fine once you learn how to adjust for it. However, when learning to roast I would recommend a more stable atmosphere. 👍
Noted! Yeah I just wasn't sure where to roast with all the fumes from the burner and the gas that the coffee will give off without adequate circulation, so I went to the garage to make sure I had nothing but fresh air. I was definitely concerned about the ambient temperature as well as the humidity (or lack thereof), and with summer there was a bit more consistent weather but I definitely hear what you're saying. At the moment, it's the best I can manage, but I'll try and work towards something better when possible
@@alexwalshaw you can roast inside, even in a small home if you you open a window or 2. The only thing to worry about there is the fire alarm going off. 👍

I'm pretty sure you have to go to devices and select center 306 as this roaster isn't standard and built into the software like the Fortis. Mmm, to be honest it's been a long time since I set it up but it goes something like that! Sorry if I'm not so helpful 🥺

Could you please tell me what scales you were using under the cup? I would like to get one set of scales to do everything and like the one with the timer built-in also. Also, how do you descale the boilers on this machine
It's a $12 jewelry scale I found in a video by Xris! You can look up "$12 espresso scale" and you should find it :) The larger brew scale is the Hario Brew Scale. A classic that I highly recommend for a single scale to get started with :)

I liked the smaller chassis of the Mara. And I didn't have an extra $1600 lying around. Definitely a nicer machine with more features, but I didn't need and couldn't afford them.
