This is how I serve sparkling. I’ve seen others use 2 hands, one holding the bottom with thumb in the bottom, and the other supporting the neck. I guess either is fine?

THIS! This, IMO, is a critical "missing piece" of studying. By being able to physically see some of the most famous vineyards and how the lay of the land influences the vine helps to explain a lot. Yeah, if you can hike Bussia, or in my case the GCs of Chablis along with all the other places I've been, it really solidifies why a specific area is what it is. But not just that. Visit the wineries. Talk with the winemakers. Eat the food. Interact with the locals. It's all part of the terroir. And if you can't afford the time, money, or both to go to far flung places, then do whatever you can to visit the closest wine growing area to where you live. Even if it's not known for world class wines. I guarantee you that there is something to learn by seeing where the grapes come from AND talking with those winemakers. I have taken advantage of being in the industry countless times by traveling close and far to walk vineyards and taste from a tank or barrel. I also have an additional "in" with my TH-cam channel being a member of the press, but trust me. Winemakers and winegrowers love it when somms come to visit. It gives them a chance to show us what it's really like to grow and make wine. Finally. I HIGHLY encourage everyone to download Google Earth Pro. Not Google Maps or Google Earth. Google Earth Pro. It's a free desktop app that works on Mac and Windows. It's the next best thing to being there. It's the software I use for my own videos and I use it as a study tool by creating my own versions of wine maps in it.

I'd probably be pretty ticked off if I ordered a bottle of 2013 Pierre Péters Les Chetillons and was brought a bottle of Prosecco instead! I guess she didn't repeat the order back to them.

So the fellow in the video doesn't list resources, books etc, when studying to be a Somm. I'm not a Somm but, I've found that the resources are really people. At the moment, I'm studying Scotch and American Single Malt. I know a guy who was in studying CoM. The nosing and tasting for spirits and wine seem to be the same or closely related.

This was a nice idea, but really poorly executed. To decant a 2005 Estournel, i would initially loosen the cork with those forked prongey things - its late, i forget what its called - i certainly wouldnt just thrust a spiral screw through what may well be a pretty decrepit cork. There's every chance youre filling the bottle with multiple shards of cork! Clearly, if you're actually opening a 2018 bog-standard Bordeaux, this doesn't apply.

Guys relax - this is obviously a demo video demonstrating text book service - often needed to pass official CMS exams - and therefore assume that wine/vintage is the correct one - no one's opening the actual estournel 05 for a demo video.

  • @WineWorldTV

Many things have aided my studies. I point to my own videos and the research that goes into them as my most valuable resource. But travel is huge. Much of my travel is directly related to the videos I create - the interviews at wineries mainly. But also attending conferences, trade shows, seminars, etc. where I sometimes get interviews. And like Keegan says, while our technology is great, I use Google Earth Pro extensively in my studies and incorporate it into my videos, nothing replaces actually visiting a region. Immersing yourself not just geographically/geologically, but also culturally. It's one thing to see the Vosges, it's another to experience the people, food, and wine of Alsace. I think we as sommeliers do a great disservice to ourselves if we don't travel. Even if it's to our local wine region. So much can be learned about wine and other beverages by visiting and talking with the people who make them.

I've read all the comments and everybody picked up on 1. the wrong wine, 2. the wrong year, 3. the decant was too fast and violent for a delicate wine, 4. and a 5 year old cork will present few problems, A proper 30-45 year old Bordeaux will take much more care, 5. and the taste pour for the host was too heavy. Back to school for this newby.

This should be required viewing for anyone in the wine service industry. I can't tell you how many times I have seen servers cut the foil capsule on the first lip instead of the second lip, and never bother to use a serviette to wipe the bottle after removing the tip of the capsule and again after removing the cork. I shared this video on my Facebook page in hopes of spreading the word.
