Cold Smoking cheese with Cold Smoker Tube in huge Kamado for 30mins
Tested our new NEW ECO FRIENDLY COFFEE GROUNDS PELLETS FOR COLD SMOKING. These 'Super Smoker' Pellets light easily, and create double the smoke of wood pellets. They create a very strong Smoky flavour when used in a Cold Smoke Tube so I mixed them 50/50 with Lumber Jack Cherry & Coffee Grounds Pellets to cold smoke Cheese sticks in a huge Kamado in 30 mins. We smoked an earlier batch longer but they were oversmoked, so 30 mins seems just right.

      A hoppy beer like VB works well, 50/50 with water to make it flat so it is not frothy and draws up the Injector, you can smell the Hops.

    if you can find old candles melt them onto old news paper screw them up into little balls put 1 inside light it shut the door no smoke.the candle wax on the paper is the best.tried every thing over the years but i also have an ultimate wood heater 20 years old.

    How much charcoal did you use? How many chimneys worth? I used 2 chimneys on the weekend and got it 460f

      I made a mound of IRONBARK CHARCOAL by hand and started it with our FIRE ROD Heat Gun. Charcoal is hottest and burns longest in a big mound. Spreading it around loses heat. Diffuser plates or pizza stones also stifle heat and air flow. Bottom and top vents were fully open. Pile charcoal mound on one side and offset smoke on the other, or put mound in middle for pizzas.
