Solid review as always. I just ate my first one a couple days ago from Lone Star Mastiffs farms. Zero floral and bitterness. Very enjoyable pepper. Definitely my new favorite Red Pod. Incredible looking Pheno. I'm sure mid season pods will be much hotter.

One of my favorite ways to use cascabel pepper is when making a cheese dip. Its warm ebough to linger, light enough to be friendly to most depending on concentretion. Also use finely ground in your taco mixes, flaked for chile (both red and green), works great on huevos rancheros, folded into sausage. Also fantastic replacement for smoked paprika in many situations. Deviled eggs? Potato salad? Tuna salad? Cascabel is a perfect introductory pepper for those of you who have a family that thinks ketchup and black pepper/telicherri is spicy. Also a fantastic base for a barbecue rub. Three ounces of primo cascabel will run you sub $10 on Amazon. Pro tip: fold it into your meatloaf, and a bit onto your glazes... 🥰

When I was young, I worked for a seed company that was developing new varieties of vegetables. Cucumbers and sweet corn mostly. I learned what people liked about these. If the taste, texture and vigor didn't cut it then it was over. No more time was wasted on growing bad seeds. It was a fun job. I tasted raw sweet corn that was how they compared it. They never cooked it. Too bad it was seasonal. There was less than a dozen full time employees. If I were growing peppers maybe I would skip that one.

This salsa is not hot at all and also not tasty in my opinion. Heat is very subjective, and so is flavor, but this salsa fails in both categories for me.
