I India's Street Style 15 Minuet Chicken Dum Biryani I
"Welcome back to Middle Class Ani ! Today, we're diving into the world of flavors with a classic and aromatic dish - Chicken Biryani. This beloved dish is a perfect blend of fragrant spices, succulent chicken, and perfectly cooked rice. Follow along as we take you through the step-by-step process of making this mouthwatering delicacy."
Ingredients:
- 2 cups Basmati rice
- 500g chicken, cut into pieces
- 1 cup plain yogurt
- 2 large onions, thinly sliced
- 4 tomatoes, chopped
- 1/2 cup cooking oil or ghee
- 4 cups water
- Fresh coriander and mint leaves for garnish
- Salt to taste
For Marinade:
- 1 tablespoon ginger-garlic paste
- 1 teaspoon red chili powder
- 1/2 teaspoon turmeric powder
- 1 teaspoon garam masala
- Salt to taste
Whole Spices:
- 2 bay leaves
- 4 green cardamom pods
- 4 cloves
- 2-inch cinnamon stick
- 1 teaspoon cumin seeds
Instructions:
1. **Marinating the Chicken:**
- In a bowl, mix the chicken pieces with ginger-garlic paste, red chili powder, turmeric powder, garam masala, and salt.
- Add yogurt and ensure the chicken is well-coated. Let it marinate for at least 30 minutes.
2. **Prepping the Rice:**
- Rinse the Basmati rice thoroughly until the water runs clear.
- Soak the rice in water for 30 minutes.
- In a large pot, bring 4 cups of water to a boil. Add salt and the soaked rice. Cook until the rice is 70% done. Drain and set aside.
3. **Frying Onions:**
- In a deep pan, heat oil or ghee.
- Fry the thinly sliced onions until golden brown and crisp. Remove half for garnishing.
4. **Cooking the Chicken:**
- In the same pan, add the whole spices (bay leaves, cardamom, cloves, cinnamon, cumin seeds) and sauté until fragrant.
- Add chopped tomatoes and cook until they soften.
- Add the marinated chicken and cook until the oil separates and the chicken is almost cooked.
5. **Layering the Biryani:**
- In a heavy-bottomed pot, layer half of the partially cooked rice.
- Add the cooked chicken on top, spreading it evenly.
- Sprinkle fried onions, fresh coriander, and mint leaves.
- Add the remaining rice as the top layer.
6. **Dum Cooking (Slow Cooking):**
- Seal the pot with foil or a tight-fitting lid.
- Place the pot on low heat and cook for 20-25 minutes. This allows the flavors to meld and the rice to fully cook.
7. **Final Touch:**
- Gently fluff the biryani with a fork.
- Garnish with the reserved fried onions, fresh coriander, and mint leaves.
8. **Serving:**
- Serve the aromatic Chicken Biryani hot with raita or your favorite side dish.
