That is NOT a lot of build up. Smoking meat is a very dirty task. I've seen far worse smokers, especially some that are extremely hard to clean.

This is a great video. I see what I’ve been doing wrong. You started a small amount of coals burning in the corner then the others catch eventually keeping the heat consistent. I usually start a chimney full of coals so my grill starts out around 500 degrees. It cooks but too quick . I’m going to try your method. Thanks!

I got a ironwood test me fat side up.. Once you wrap take it to 205 .... Let it rest for 2hours.. You will thank me later .. Forgot get some bear mountain pellets 😂

I do this every time...that Italian dressing and a few more seasonings and that's it for me!!! Constant flipping if over the coals because that Italian dressing oil may cause some flames!!!

When I went to Jamaica they were using the Walkerswood “seasoning” as a dipping sauce. They would mix it with ketchup and water to a desired consistency.
