So getting a pure black cat is actually extremely rare. They only spawn under two conditions: you can either find them in witch huts (a rare structure that only spawns in the rare swamp biome) or they can spawn in villages after a full moon (or... is it a new moon... I forget, it's one of the two), so the fact you stumbled into a village with two of them at the right time for them to have spawned is insanely lucky, cause I've seen so many minecraft youtubers experience *pain* trying to get a black cat. So the reason you and your pets sunk is because there's two different types of snow (three if you count snow layers); regular snow blocks, and powdered snow blocks. You can walk on regular snow just fine, but you'll sink in powdered snow unless you're wearing leather boots (or there's a snow layer on top), and if you're in powdered snow for too long, you'll start to take freezing damage. Spotting the difference between regular snow and powdered snow is extremely difficult (I think powdered snow has just the tiniest bit more blue pixels or something like that), and mobs like pets can also freeze, so taking pets on adventures to snowy mountain biomes is extremely dangerous for them (honestly taking your pets anywhere in minecraft is pretty dangerous, so I never take my pets adventuring with me unless I'm using a mod that allows my pets to respawn; personally a big fan of the mod Domestication Innovation for that). Smithing templates are those little slab things with symbols on them (I believe you picked up one or two in the previous episode). They're the things I mentioned in a previous comment that let you add colored trims to your armor.

A book I read recently was “Just Stab Me Now” by Jill Bearup. Absolutely wonderful stuff, so funny, such a fun concept to play with. Definitely recommend it if you like slowburns and meta narratives
