    Let me tell you the least fancy and the most effective way the south Indians have kanji/pazhayathu everyday. Use ponni rice for cooking your lunch, then transfer the left over rice in a separate utensil which has a lid. Before you go to bed, without directly touching the leftover rice pour enough water until the rice is completely submerged, try to keep it in a warm place. In the morning add some salt to the rice-water mixture and now you have the best probiotic rich pazhayathu. Drink the water and eat the leftover rice with some raw onions and/or chills(they taste good and are rich in fibre).

      If you use normal tap water then boil it and cool down to the normal temperature but if you are using RO water aur UV filtered water then there is no need to boil it. I made kanji 4 days ago and it is perfect.

    In Adana we make şalgam. we put purple carrot in it for similar drink same color and look. Fermentation is done with some kind of beet that we call şalgam in turkish. And after fermented 1 day or so, we drink it with purple carrots in it too. Very common in here. Taste is kind of sour but hard to describe. I guess we can say it is a version of kanji.😊

    Had drank it in my childhood.which was fermented in a mud pot covered with a cloth n it is made in the family since generations.Also we made our own vinegar at home in mud pots itself.

    That was fun.. with that much salt per liter of water I'm surprised you drink it straight like that. That sounds like a very salty drink maybe take half out and had something else that's a sweeter to counteract it I don't know that sounds looks very salty
