Galician empanada recipe of bonito! Make your own dough! | Spanish Kitchen
Hi guys! In today's video I will show you how to prepare Galician empanada. There are many different fillings, today I will prepare it with tuna. If you are in a hurry you can use ready made dough, but I really recommend you to try this one... let me know!!
Ingredients:
onion
red bell pepper
green bell pepper
white tuna loins
4 tablespoons of fried tomato
a small glass of olive oil
650 gr flour
200 ml of milk
1/2 teaspoon of paprika
1/2 teaspoon salt
Do not forget 1 or 2 boiled eggs.
Peel and cut the onion into medium pieces.
Remove the seeds from the red and green bell pepper and cut into medium pieces.
Pour the oil in a frying pan and when it is hot add the vegetables, fry them over medium heat for about 20 minutes.
Strain the oil from the tuna and separate the slices.
Add 6 spoonfuls of fried tomato to the vegetables. Add a little salt and mix well. We turn off the fire. Strain the sofrito to extract all this oil. We will use the oil to make the dough.
Pour the vegetables in a bowl and add the tuna. Mix well. Chop the boiled eggs and mix until all the ingredients are well blended. Let it cool completely.
To prepare the dough:
We will need 200ml of oil in total, so I add the oil from the sofrito and add olive oil until we reach 200ml.
Pour the flour into the bowl of our mixer. Add the paprika and salt. Add the milk and mix a little. Add the oil and mix. We finish kneading with our hands and make a ball with the dough. Let it rest for 20 minutes.
Prepare a greased mold with oil.
Divide the dough in 2. and stretch well with a rolling pin and put it in the mold. Stretch the other half of the dough. Pour the filling and spread it well. Cover with the other half of the dough and cut the edges that are left over. With this dough decorate as you like.
Make a hole in the middle so that steam can escape and it does not break.
Brush with beaten egg and bake in the oven for 45 minutes at 200 degrees.

Excellent video. Thank you for showing the whole process. I usually buy one every year, keeping the whole ham in the fridge wrapped in saran wrap and every so often carving what I need, but it gets moldy and after about six months it gets off flavors. I just got a vacuum sealer, so the next time, I will cut it all at once and vacuum-seal portions, as you have shown.
@@vincesalgado1 Hi Vince!!! Thanks for watching!! Yes!! Vacuum is a good option if it takes you so much time to eat the whole ham. For this Christmas I have bought a 7 kg ham and it is at the kitchen counter, but I think in a few months it will desapear 🤣🤣 regards!!!!
Hi Olive, thanks for that. When I open the ham later this week I will send you a picture or 2 of how it looks. From what I’ve seen of it so far, it looks as if it’s the lower part of the thigh or it has come from a piglet and not a full grown animal.

I really like this video, why? It shows you how to cut a ham as it it done in a Spanish home. I’ve watched a number of videos from the professionals and they do not go into the detail that Olive does. Fortunately, I’m starting with a small 2kg one from Lidl. Olive I have one question, the black meat on one side of the ham. Do you have to discard it or are there any other ways that in can be used?
@@markwasil541 Hi Mark!!! Thank you so much!!! I really apreciate your comment 🤩🤩. When you say black meat are you refering the black side in the minute 13:45? This black part we discard it, because it's the outside meet/side and it has dirt, you must clean both sides before start cutting. If you have bought an only 2 kg ham in Lidl, (probably without bones?) probably it will be cleaned already just ready to cut. Hi. I’ve made a big batch of croquettes - I have made them to the stage just before frying and have frozen them to use at a later date. But I have just realised that I have done only one layer of egg and breadcrumbs. I am worried they will burst when I fry them so can I remove from the freezer and while still frozen coat with another egg and breadcrumb layer and refreeze? I hope this makes sense. Thank you.
Yes the issue here is that they burst because of the steam released inside of them from the heat of the fryer. If the mix is too thin, you must reheat and thicken and chill again.
