I Wanna Eat: Chashu | Japanese Roasted Pork Belly
In this episode of I Wanna Eat, we’re making Chashu (also spelled Char Siu), a Japanese pork belly roast in a sweet marinade. Chashu is probably best known as a topping for ramen, but is also great in other dishes like fried rice or in stir frys. The recipe today is a very simple and easy version of chashu, so we hope you try it out at home!

Can the corn syrup be omitted?
The corn syrup can be skipped, yes! The purpose is to help the melting sugar to avoid crystallizing, so try to avoid stirring much when cooking the sugar.

The skin is indeed trimmed off! We purchased it without skin, but it is fairly easy to remove the skin at home as well. You can also save the skin to make homemade pork rinds or cracklings

3:06 you said to “prevent steam”. I’ve seen another video where a guy said you’d want to steam the ribs inside the foil for the low and slow process. What’s the reason for steaming or not steaming? Is there a study done for this?
Hello! We do want steam circulating in the pan, which helps to make the meat more tender. But we don’t want the steam to condense on the top layer of foil and drip water back down onto the meat directly. The tented foil shape will help steam to move around in the pan, but stop it from dripping. Thanks so much for watching our video!

Good job! (Though we usually have the chopped cabbage and green onion in Japan, too.) If you put the finely minced red ginger/Beni-shoga (紅生姜), it would be more colorful. (Interesting take of putting shrimps. Gotta try.) By the way, you can use the Takoyaki Maker for other dishes -- like pancake balls with chocolate chips inside.

I used to have lots of タコパ (Takoyaki Party) with my friends and family in Japan growing up; I loved pancake with chocolate or wieners in them; Ajillo was another good one! We did not put beni-shoga in this recipe simply because we did not have an access to it at the moment, but hey it let's you taste dashi in batter much better without being interrupted by the strong smell of ginger and it is delicious! You should try!

For this recipe, we used, 1/4 cup Balsamic Vinegar 3/4 cup Olive Oil 1.5 Tbsp Dijon Mustard 3 Tbsp Mixed Berry Jam + 1Tbsp Honey (depends on how sweet the jam is; our recipe used homemade jam so I added honey, but you could probably skip honey if you use a store bought one!) then add some salt and black pepper (about 2 pinches each).

Yeah when it comes to poultry the U.S doesn't play they take it more seriously than any other political issue.
Thank you for the comment! No matter where you are it is important to check if eggs are labeled as safe for raw consumption. But when these are unavailable, Ramen Eggs are a great substitute! :)
