PUMPKIN BUTTERNUT SQUASH SOUP
We are officially in soup season and this easy homemade pumpkin butternut squash soup is just about perfect with a slice of crusty bread for dipping.
Pumpkins are rich in vitamins A and C, fiber, iron and antioxidants, offering not just warmth but also a wealth of health benefits. Roasting the pumpkin enhances its natural sweetness and brings out a deeper, richer flavor, making it the perfect base for a comforting soup.
INGREDIENTS:
1 Pumpkin / Butternut squash
4 shallots (no peeling)
1 head of garlic
Extra virgin olive oil
Salt and pepper, to taste
Rosmary
Thyme
Bay leaves
1L milk
1 glass of cream
Optional garnish: sunflowers & pumpkin seeds
INSTRUCTIONS:
Begin by preheating your oven to 160°C.
Cut the pumpkin / Butternut squash in half and remove the seeds.
Cut shallots and head of garlic in half without peeling them.
Put the vegetables on baking tray, add the herbs, salt, peeper and wrap in aluminium foil.
Bake it for 1 hour.
Once roasted, peel all the vegetables and add milk and cream. then put in simmering for half an hour.
Once cool down a bit blend it in a blender.
Serve the soup warm, garnished with a cream and roasted seeds.
