20 years plus in the restaurant industry (13yrs+ Bartender, 4 front of house, 3 kitchen) has been one big adventure. From making magical memories at your favorite tiki bar, to cooking international cuisine at some of nicest resorts, to say I love my job would be an understatement. It is with great pleasure to share this passion with professionals and non professionals alike. @@jimij1802 You are correct, but this is an effect of all excessive intake of spirits and sea water beleiveit or not lol. Not Absinthe. If wormwood was so dangerous, Mallort would be illegal.

The drink you made with the jello
Thank you for the comparison. Of the commercial brands I've only tried John D. Taylor's Falernum. I always found it too clove heavy and felt it dominated any drink it was used in...even if I cut back the amount called for. For the past several years I've made falernum at home trying a couple of different recipes and have found the results much more to my liking.

I Started with 96% ABV I would like to know what the ratio of the infused vodka to add to a Liter of 40% ABV Thank you for your help Dave
@absolutlymoonshine 96%? holy cow, how did you acquire such a high ABV spirit? That's pretty awesome. To answer your question, i would water some of that high proof down so it's more palletteable. If you want to stick with the 96% and add it to a 40%, then i would do a half OZ of high proof to every 5 oz's of 40%. Definitely taste as you go. 96 is dangerous, so maybe aim for 69% or lower. Good luck and cheers. Report results if possible.
In siphon extraction, did you have to let it cool between each extraction? Why do you think you only got about 65% final recovery? Informative to compare the processes.

@absolutlymoonshine My apologies for the late response. Dark rum goes well with coconut, coffee, chocolate, and even citrus. Definitely play around with it. I love toasted coconut with dark rum. For Gin think salsa. Tomatoes, herbs, peppers, and even Teas are delicious with gin.

How about diluting the ABV 99,9 % used for infusion? for the final use Or shall we use a less ABV % ???

@AdventuresWithAlchemy Isn't 24 hours too much? Most simple syrup infusions recommend 12 hours of infusion at most, like cinnamon syrup. Maybe it was a typo on your end? Also how much is 1 cup of almond in gramms?

I was always shown that Orgeat is pretty much an Almond milk syrup but in this video it’s an Almond infused simple syrup

As of late my Mai Tai is: 1 Plantation Original Dark 1 Appleton Estate 3/4 Lime Juice 1/4 Grand Marnier 1/4 Clement Creole Shrubb 1/4 Giffard Orgeat 1 dash Black Walnut Bitters 5 drops of saline Garnish with mint leaves for the aroma
I've had 4 of these. Liber & Co, & Latitude 29 are good but hard to get in my area. Liquid Alchemist is bland. I buy Giffard because it gives the most bang for the buck. Lots of flavor at half the price. I just wish it came in smaller bottles. In a cocktail with 4 or 5 very flavorful ingredients you're not going to notice a lot of subtlety out of 1/4 oz of orgeat. You want ALMOND.

what proof Everclear would be ok to use in the lower ball?
On the first method you showed us, after you screw the lid on does it mater if the lid stays poped up during the week of infusion process? I see some people smack the top of the lid, but when I do it it just pops back up. Does this matter when infusing with Alcohol. Nobody seems to mention that?
What's your opinion on orgeat from Maison Routin?
I'm currently infusing whiskey with bacon fat! I can't wait to try it.
