SUMMER 2024 TOUR OF OUR BACKYARD
In late spring and early summer, we visited several garden centers around our place and bought what we want to plant this year. Annuals, perennials and vegetables topped our list. We know where to plant them based on the past years of experience. But there will always be something new. Gerberas and multi- coloured hydrangeas were gifts from Foodie Ate. Treasured vegetable seeds like bitter melon (ampalaya), wing bean (patani) and string beans (sitaw) from Aching Meng. I bought two pear trees. I was told that pear tree should come in two so they can pollinate well. In addition, I will be counting at least 3 years before I can harvest. BTW, I have gladiola as well. They were beautiful but bloom only once.
Trellis was also set up for my bottle gourd (Upo) and winter gourd (kundol). Next year we will build more for the bitter melon, beans, cucumber and more. Also, a feature in our garden are two stone fishes which I placed on top of our table. I call them “Marites” because they face each other and seemingly asking for the latest news. I also have a wind chime as a gift from Foodie Lara and Richard. Foodie Badi gave me an electric food warmer for indoor and outdoor use. The tables, benches, plant boxes and trellis were all made by Foodie Mon.
After planting, the flowers and vegetable plants started to bloom and grow very fast. Perhaps because of the fertilizer I used. Aching Meng advised us to use the chicken manure fertilizer which we followed. To shoo away the squirrels, I spread “spent” ground coffee beans on the plant boxes. Starbucks is giving this for free.
After several weeks, everyday was harvest day. I have eggplants, string beans, cucumber, Roma and cherry tomatoes, Upo, beans, zucchini, kale and more. I am still waiting for ampalaya and patani. I have an abundant supply of herbs like parsley, rosemary, thyme, sage, oregano, mint, spring onions and more.
Fall season seemed to be just around. In the mean time, I will enjoy and cherish the moment.

      Hello abc….I guess you misjudged the OKOY. If ever you will have the chance, just eat a small portion and you will have an experience of a lifetime. BTW, don't forget to dip it in a garlicky vinegar. Or if you will make it yourself, after frying, store it upright on a cooking rack. This way the oil will drip fast while keeping the OKOY still VERY CRISPY. There will always be a way. Have a great day!

      You are welcome! Thank you too for your feedback about the dish. I am glad you saw that I used less amount of cooking oil, thus, less fat. "Fritada-ing" or (pan) frying the marinated chicken have rendered its fat. And this was used to sauté the other ingredients, making the dish so flavourful and delicious!       Hello Liria, sa deep fry isa o dalawa ang nagkaroon ng burnt marks (strips lang) the rest are OK. Hindi namang sunog na sunog. Sa umpisa ng frying pwedeng mangyari ito. Kaya dapat mindful tayo. Perfect ang pag bake sa oven. Siguro yung napansin mo yung sa air fried (May air fryer feature ang oven ko). Toasted ang kinalabasa pero hindi naman sunog na sunog. Salamat sa comments mo. Hope you will give the recipe a try. You can choose the way you can cook the flaky chicken empanada. Pili ka sa tatlong paraan(1) kung fry mo sa pan; (2)bake o (3) kaya air fry mo. Sa akin OK lahat. Yung flaky texture at sarap very evident. Take care. :)

      Hi Jef, Pwedeng-pwede i-business, Jef. Marami tayong favorite ang na dish ito! Follow mo lang recipe at technique kung paano maging matagal ang pagiging crispy ng lumpiang shanghai. Share ko sa iyo ang pwedeng sawsawan: equal amount ng ketchup, sugar, vinegar, at water. Mix lang. Tapos i-cook mo na. Pag nag boil na.add mo ang slurry mixture. Ito ay 1T cornstarch dissolved in 1/4 C water. Patok ito. God bless.

      We used to see the moon's crescents all throughout every month but seeing the sun's crescents is awesome, great and unforgettable. Personally, I am thankful to witness this event in my lifetime!

      I am glad you saw that the PORK EMBUTIDO is indeed very special. Ingredient-wise, the use of banana leaves for wrapping, the cooking itself, and more. The taste is really delicious (as is) even without condiments! Best served with steamed rice and bread. BTW, you can refrigerate for days without compromising the taste.
