Welcome to A Cut Above Knife and Leather Co, formally know as A Cut Above Knife Sharpening. I started out doing knife sharpening and as time passed branched into sharpening other items such as scissors, salon, beautician shears, barber scissors, woodworking tools such as carbide saw blades, and many other items. I them branched my business into making custom and production knives.
Today I am still do lol the above but have marketed to include leather work. This started with knife sheath sans other small projects for clients and eventually turned towards my other passion in life Firefighting. I make and sell leather goods tailored towards the fire service this includes helmet shields, glove straps, chin straps, radio straps as well as suspenders.

Hey man, I was wondering how many clients you get and knives per client? I'm 15 and I've been sharpening knives since I was 8, I want to start a business but I don't live in the city and was wondering if I could still do well And could it be my main business?
That’s awesome to hear, keep up the grind. As far as your question, there are a lot of variables to consider. I sharpening isn’t my main business. I work full time as a firefighter. As far as not living in a city or town. You could get ahold of a hardware store or other business and set up a drop of site with them. They however may want a percentage of sales so keep that in mind. As far as number knives per client it’s very sporadic, some bring 2-3 others bring 10+. What I have found that brings in more customers is offering more sharpening services. Like chainsaw, scissors, yard tools, things like that. When you are old enough to drive to business you can offer onsite scissor sharpening for salons and barbers. Those bring in more money per item. I really enjoy projects like this. I might have employed some "Nevr-Dull" magic wadding on the brass? (Less rubbing/labor.) I've been working on some conservation for my Model 1860 light cavalry sabre. Will try some of the Pecards antique leather dressing on the grip. That Bowie came out very nice and I imagine your customer was well pleased...
P.S. I just now learned those two belts for sharpening ceramics - $49.95...WHAT?!?
I tried sharpening a ceramic kitchen knife on my KME guided-rod sharpener years ago that used the DMT diamond abrasive stones...just couldnt get there! I'm enjoying these WSKO tutorials, thank you...
That wide belt made short work of correcting that blade! Curious what one might charge for a similar repair?
I only charge a couple dollars to fix the edge. It takes no time at all to correct off camera with the equipment I have.
P.S. Whoa! That's one very fine fixed blade knife, nice work. I've been interested in leather working since I was a youngster. Have you ever worked with a TSPROF? I'll have to go and have a look at your website...
Thank you for your comments. Yes I have a tsprof and actually that’s what I started with but quickly learned I couldn’t sharpen professionally with it so to the slow process as you know. I still have it and it’s a fine piece of craftsmanship that does a great job

Really interested in and appreciating these tutorials, thanks for putting them together. As mentioned - my WSKO rig is still in the box, I've been working through these tutorials before I set it up to try. I also have a KO-3 by TSPROF which I have been able to put that "Mirror-edge" on blades with. Much slower process, of course - but the results are fantastic. I even restored a pair of household shears to better than new on the TSPROF. What a pleasure it is using a truly sharp knife or scissors! You have got yourself a really nice set-up there, and going the extra mile for customers will always pay off. Take care...
Morning... I have the TSPROF/KO-3 (Have only done a handful of my own kitchen/pocket knives on it, but with much success.) and recently purchased the K.O. Edition with the "Blade Grinding Attachment." (Still in the box.) I've been watching a bunch of these tutorials hoping to pick up some theory before trying it out. I no longer have a shop, and am working in a small space - why I went with the WSKO instead of a 1"x30". I've heard all kinds of good things about this rig and have seen another professional sharpener here on TH-cam that also uses the WSKO in his business. Appreciate this, and will subscribe. I just got the print sharp attachment from etsy for 30 bucks and it works great. I don't sharpen knives for a living. It has made my kitchen knives the sharpest ever. It's super fast and I don't have time to sit around with a wet stone which I do have, those take time and practice this doesn't.

I use a twice as sharp sharpener and I use it for both kitchen/utility and salon shears. Only difference fee is the angles and a few in between steps with the salon shears you don’t need to do for the others. Stay tuned I will make a newer scissor sharpening vid.

Great informational and instructional video. I’m going to assume it was not intentional and rather done out of ignorance, but I am offended by your disrespect of Old Glory. The flag is supposed to be flown, stored, or respectfully burned. Being a mechanics dirt collector is not an acceptable fourth option. Perhaps the next time you see a flag draped coffin you will reconsider your use.
Thank you for your comment however I feel compelled to correct something here. Firstly the mat under my sharpeners is a gun cleaning mat. I used this for its nonslip, non scratch, and for vibration dampening. Secondly for myself I served 8 years in the military and have been a firefighter for over 20 years. I have participated in as well as attended more funerals with flag draped caskets than I wish to count. I have been presented the flag of my passed father. I have the utmost respect for old glory so much so I respect which side of a group of flags the American flag should be flown on. When the national anthem plays or taps is played I get goose bumps. I’m proud of what the flag respesents and I will always respect the flag.
Are you able to sharpen common household scissors with the TAS Ookami gold system or is it made for salon and barber shears?
You can sharpen any style scissor with the TAS.

What machine are you using for the chisels?
I use a modified shop fox universal knife grinder with a 120 grit wheel for the bevel and then a work sharp ws3000 to hone the backs

Due to a process they use to make the blade tougher. Ceramic blades are either black or white

Over the years I have received items in the mail from customers. Most of the time I have the customer pay the shipping cost. I use pirate ship to find the lowest cost.

Thank you for your question. I use the twice as sharp system for scissors. Prices range depending on the package you get. I’ve seen several also on secondary markets. But these are worth every penny and quickly pay for themselves

I can be very simple. People tend to over complicate the process. A few basic tools is all you need to start with.
Volunteer Firefighter/Full Time ACP Paramedic of 20 years. Alberton, Prince Edward Island, Canada I’m about 5 or so years out from retirement. Looking to start a small business. Sharpening is one that I have been researching for a while now. Really appreciate your videos and insight. I’m looking at home based and also mobile based. I haven’t watched all of your videos yet but will. Wondering if you take your business mobile and do you have any pointers for anyone thinking of going mobile? Thank you for your service Brother. Thanks brother for the comment and congrats on your upcoming retirement. I haven’t started my countdown yet haha. As far as mobile I really only do hair salons mostly bc of convenience of the hairdressers/barbers I work out of the back of my truck I can either run a small inverter generator or plug directly into my truck and sharpen on my tailgate. The rest of my sharpening is dropped off at my home via a drop box. To help your decision on being mobile I would be looking at the are you plan on servicing and what competition is local to you. If you have a lot of restaurants it may be advantageous to go mobile. If I were to go mobile I would look into getting a used ambulance 🚑, already has power, lights, ac/heat, storage. And is eye catching. Hope that helps some. Feel free to message or pick my brain
@@ACutAboveKnifeandLeather awesome sir thank you. My home province has only a few sharpeners that are registered with Google search that I could find. Does not appear that anyone in the province does mobile. Province is about 330kms long with two cities. One located 45mins from me and the other 90mins. Lots of smaller towns and communities dotted throughout. With the world of convenience that we live in, I’m thinking that going mobile might be better in my case. I would still do it at home for local folks as well. The ambulance idea is exactly what I had in mind. We run Mercedes sprinters here on the island. Like you said they are already powered, heated, lights etc. would be some cost savings going with a retired ambulance as long as a fella got one that was still decent. Great video. I thought stropping was best done edge trailing. I noticed you did edge leading. Any particular reason why?
Edge leading for me is faster and working through the grits the way I am by the time I get to the 12k I’m polishing the edge. A leather strop with edge trailing passes would give a more refined edge but for everyday kitchen knives and pocket knives the way I showed will render an extremely sharp knife. To date I’ve never had a customer come back and say I wish you made my knives sharper. Most say these are sharper than anything I’ve ever used. So it boils down to what is the result you want and what is your time worth to get said result.

Great setup. I used to have a Work Sharp knife "Original" sharpener, which worked well until I broke it. 😒 I still have a Workshop 3000, which is great for establishing edges on chisels and plane blades. After that, I use diamond stones -- up to 8000 grit. I also have several Work Sharp kitchen and field sharpeners, and they all work well. I have given them as gifts to friends and family. I am eyeing a Work Sharp Ken Onion Mk 2, similar to what you are using, so I really appreciate your videos on this subject. Thanks!
I was really happy with my stitching pony . It was a different model . It was $14.85 and I got it in Wa state in 2 days . It holds nice and tight . I was also real happy with the waxed thread i bought from temu . The thread I bought from Tandy was $2.99 for 25 yards . I bought thread that seems to be the same diameter as I buy at Tandy , but in 284 yards for $4.48 . I cant see any difference in the thread , so I bought 15 spools of it in different colors .

So you’re not attempting to match the angle of the knife given to you, but reforming the edge to fit your predetermined angles. Is this simply a time issue both on the initial knife and the return of the same knifes for touch up? Other than sometimes removing more material from the blade then is necessary , are there other disadvantages you might see? Do any customers,if they know enough, ask for their angles to be matched? How do you handle this? Do you do the same for your own knifes when time and volume aren’t an issue?
For a convex egde I use the most average blade angle this allows for durability as well as longevity. I have had several customers ask for specific angles or to have a more razor sharp edge. For my kitchen knives I’m ashamed to say they are dull as can be. What’s that old saying. The shoe cobblers kid has the worst shoes. But when I do get around to sharpening my own I use the same angle I use on the majority of all customer knives. Yes it keeps it simple for repeatability and allows to quickly process numerous knives without having to reset each machine. For most general purpose knives there’s no need to get to hung up on the blade angle. Unless your drastically at either spectrum of the scale. The other caveat to this is I have sharpened enough knives over my time that if I have a knife that needs a bit of a different angle I just rotate my wrist and accommodate the angle instead of resetting the machine. The biggest and most important part of sharpening isn’t the angle. It’s keeping passes even from side to side and making sure you have apexed the blade before moving to a finer grit after the first grit.
So rather than determining the angle of the knife given to you, you force a new angle on it? Is this just to save time?
Most knives are fairly close to the angle I’m sharpening at. As long as you keep your passes even and make sure to apex the edge you are golden. Regardless of the angle you set. And yes matching each and every blade would be inefficient as well as unnecessary for the average kitchen knife.

I have not. I have an Alec Steele 2x72 belt grinder I use for this. Not saying it couldn’t be done but the 3hp motor with 2” belt makes short work of it.
A note on the reassembly (at th-cam.com/video/L-7iO8reZuY/w-d-xo.htmlsi=wlIfQTv3u8BIXwsN&t=861): those are Belleville washers, not wave washers--both a type of spring washer--and the flange nut should go against the stack of Belleville washers with the smaller nut next to act as a jam nut. The flange nut offers a larger surface for the Belleville to press against. You can also reverse one or two of the Belleville washers to change the springiness (i.e., spring constant). Good, concise video, though.
What grit belt on the worksharp?
Unless your sound and video arent synced, It would appear that you are not sharpening all the way to the tip of the blade
Do your professional chefs say that your 12000 grit sharpening makes their knives too smooth to cut a tomato or other food items easily?
You can always finish it with a diamond paste like funny juice which will leave it some bite
Sorry, I'm not convinced that watching you drag the knife across your hi tech machine is worth my time. I want to see the new edge after you sharpen. Cutting paper is the least or my interest.

Im getting back into trying to figure out knife sharpening after i gave up uears ago. I have the onion with grinding attached. And a harbor frieght 1x30. The harbor frieght rpm's seem too high.
That’s what I love about Ken onion is the ability to dial in the speed. I use higher speed on coarse belts and slow speed the finer the belts go. If you run fast speeds with fine grits you will overheat the blade very quickly. You may be able to get a variable speed controller for your harbor freight or play around with pulleys to slow the belt speed down.
How are you controling the angle of the edge you are creating? Just going by feel? thanks
