A journey in wild food. From the Wild was created with the ethos that having a close relationship to where our food comes from is profoundly important. Sharing meals conjured from wilderness adventures with kindred spirits - that's what this is.
What it's not is a cooking show, or survival show, or hunting show - it’s a diary of the exploration of the wilderness, trying to connect the dots between wild species and culinary. The series is largely filmed, edited, and scored by Kevin Kossowan.

Over a hundred episodes into the series, Kevin has the camera turned on him by filmmaker Preston Kanak. A bit of a backstory piece on Kevin, digging into the reasons he's fallen down this 'alice in wonderland'-esque rabbit hole of wild food.
A bountiful snowshoe hare hunt requires much butchery, and Eric Whitehead's in camp to lend a hand. Kevin then gets to foraging a heap of spring produce for a collaboration dinner at RGE RD with chefs Blair Lebsack (Rge Rd, The Butchery), and Paul Rogalski (Rouge, Wild Harvest).

“That’s not no nettles…”. So immersive, so connected to the earth, to the density of nutrients. Abundance everywhere, yet hidden. The fiddleheads, morels, and mutton. I thought I saw a bowl full of what looked like Mahonia flower buds? Oregon grape leaf holly? I tried them for the first time growing here in my backyard, and what a sweet, sour, delightful taste. Blooming in the winter. No wonder the honey bees flock to them when the winter temps get up in the fifty’s, (Fahrenheit). I’m curious if that wasn’t Mahonia, what that might be. The round, pea looking things. Anyway, I could smell the aromas from here,(Maryland, USA)😊.
Hello over there in Maryland! The pea looking things are the buds of marsh marigold (caltha palustris). We show the picking of those in S11E1 - this episode was a continuation of that one. We don't have Mahonia in Alberta, but it is in BC - wonderful plant.

Kevin really enjoy your videos. i remember you as a boy in moose camp. If you were referring to your grandfather Louis,I too have been forever touched by him and his appreciation for the bush and have many memories of our moose hunts together. I too was just a teenager experiencing the overwhelming bounty that the forest provides and is where I feel most at peace.his appreciation and zest for life was infectous. How do you use the Horsetail in a recipe. Second, whete is this filmed that you are not covered in woodticks and mosquitoes.
Thinks of horsetail like a bean sprout. Also, look to Japanese recipes as they use it when it’s in season. Filmed in Alberta in mid May. It’s about 1-2 weeks before mosquitos come, and I’ve still never seen a tick in this province. They’re around, I’ve just never seen one. Yet.

Yeah I believe that - have heard of more down southwest. They're around. The only place I've had one on me or my team was in Sweden in S2.

Thanks Mike! Same for me. Preston was able to dig into me in a way that isn't possible on your own. I loved seeing the plates back at Rge Rd too. And here's hoping - TH-cam really shifted the viewership from about 70% Canadian to 70% American. For whatever reason, Washington, Oregon, California, New York - that's where the most viewers are. Really grateful you've followed along since the beginning - it's been quite the ride.

what cameras do you use to film?, it's very well done
This episode (and most of the series) uses a Canon C100Mk2 as A-Cam. Mavic2Pro in the air. Canon 6D for any 2-cam scenes, and the primary photo cam. That's about it. Fussy about mics though, and write all the score - that helps a lot.

I'm sure he just misspoke and I'm just an amateur but I think hypholoma are a different than genus than the parasitic ascomycetes such as hypomyces. Please educate me if I'm wrong, early learner

I'm in southern New England: I often see Russela Brevipes, the host mushroom, but I've never found a lobster mushroom.

@fromthewildca 2020 and 2021 we had a ton of rain and there were mushrooms of every variety everywhere so that's when I started researching and learning about them. 2023 and 2024 have been drought years, but I still found edible boletes, oysters, chicken of the woods, one small maitake.....
This is so B.C. Let's make a pretentious cocktail in a back country log cabin with exotic herbs, but let's smoke meat in a hole we dug in the frozen ground. What kind of notes were coming off the shrub branches? I like the setting. It is gorgeous. And the premise, but something seems contrived. Are you going to make mud soup and then pair it with a wine?
