We've Moved to a New Home!
To new beginnings! We've had to say to our old home and find a new home. It's been an exhausting process. Once the old place sold we had to work quickly in finding a new one. Fortunately, we did and are happy with it. It's still in a neighborhood we love being in. If anything, we're closer to all the places we like walking to. We have a lot of work to do as the place doesn't have much of a storage. We enjoy projects so we've already been diving into.
We'll try to share what we can with folks.
We've been at our previous home for many years and it seems that it was time to leave the old behind and look forward to new beginnings and build new memories.
Thank you all for continuing to support us and we look forward to sharing our new home with all of you.
Cheers from Nadia and Rob

It’s highly unlikely this is an effective carbonation system. To get good diffusion you need to bubble it through from the bottom. Also, you need a large diffusion area so that growler needs the water to only be as high as the widest diameter of that container. I wouldn’t trust this to be any good without serious work shaking it. So if you have a paint shaker…maybe?

I've been using a setup like this for some years. I usually flavor my water with lemon or orange extract to a 1% solution (10 ml/liter) and typically use 2 liter soda bottles. I'm in the US and used to get my cylinder refilled at a fire extinguisher firm. Lately, all the places that I've gone to (4 or 5) won't refill the cylinder. What they will do is an exchange. The one disadvantage of this is that you don't get to keep your nice pristine tank. There are several advantages. First you pick up the exchange and leave and so you don't drop off your tank and come back later (sometimes much later) after refill. Second, you don't have to worry about the periodic hydro test every five years (in the US, Canada also from what I've read) as your exchange will have been properly inspected.

Hi Rob and thanks so much for the great series. As a result of my finding your site, Ive solved the issue of carbonated water and bevs for our custom van build where space is at a premium and getting Sodastream canisters makes less sense. Ive made a nice setup. Doing lots of carbonated water for my afternoon cocktail. Also recarbonateing beer that Ive not finished. My current dilemma is that beer has worked its way up the hose after a few shots. I cleaned it out by taking the hose off and cleaning with water. Do you have any suggestions for keeping the liquid out of the hose? Thanks...Ernie in Vermont

    • @NadiaandRob
      @NadiaandRob 8 วันที่ผ่านมา

Hi Ernie, so glad you've enjoyed these videos! The trick to prevent backflow is to keep the hose higher than the bottle... and don't invert the bottle. Arrange the hose so it flows down to the bottle. Then don't raise and invert the bottle when shaking. This will prevent the beer from flowing up the hose. Happy sparkling!

One of the problems with thin pans that heat up quickly such as the Lyonnaise is that if you are cooking on a flat top like an element then any deformations of the bottom can lead to hot and cold spots on the pans. This is made more likely when the bottom is so thin that it can deform more easily than a thicker pan, which sometimes happens if you put cold liquid in a very hot pan.

I would be a bit more cautious with the CO2 bottle...if that thing tips over and falls, you'll have a big CO2 Rocket flying through your house. Best practise for storing such a bottle is also to detach the regulator for optimal safety and keep it somewhere it can't fall on its side. Here in Germany all gas bottles have a collar around the top to protect it form impact if it should fall.

I use the same system but added a rigid plastic tube (straw) to the bottle adaptor that just reaches the bottom of the bottle, then put a diffuser stone on that. The result is thousands of tiny bubbles of CO2 bubbling up through the water. I set my regulator to 40 psi, start the flow just like here and walk away for a minute or two, one shake just to be sure and add flavoring!

There is actually a fourth factor that determines the amount of carbonation you get. Although it's related to one of the three factors you mentioned, I believe it deserves a mention on its own. That fourth factor is the size of the bubbles you create as you carbonate. Smaller bubbles, because of the higher surface-to-volume ratio, will more effectively carbonate the liquid as they pass through it. I started with a setup identical to yours and sourced from the same place, and I use the techniques identical to what you've shown in every respect. After a time, though, I switched to a small dropper hose that attaches to the inside of the carbonation cap. That hose drops down into the bottle and I terminate it with a small stainless steel bubbler that works exactly like an airstone in an aquarium. It makes incredibly fine bubbles that are far less than a millimetre in diameter that, I believe, allow for more of the CO2 to diffuse into the water as they percolate up through the liquid. In summary, thanks for the excellent primer. I wish I had come across something like this before I spent hours researching all this stuff on my own. Cheers!

There’s no hard and fast rule. If your water is really cold, shaking for 30 seconds will get good carbonation going. The longer it’s under pressure and the colder it is, the more carbonation. I pressurized the growler and give it some shaking when I first fill it. Then it goes into the fridge. When I want water, out it comes, attach the pressure hose and pour. Plenty of carbonation! Enjoy!

Has had and uses the Cafelat Robot for 3+ months and drinks coffee "all day long" and he still has to use a scale to measure beans and water? That's pretty pathetic, it's a cup of espresso for God's sake! He acts like he's making some elixir to cure cancer or something. He does need to share that scales he's using, there are a log of other knuckleheads using this machine that use a scale but are complaining about not being able to find one that fits.

We're not buying from a welding gas supplier, so presumably it's food grade

You've sold me on the Mineral B Pro. I wonder if you have pointers for a carbon steel wok. I'm also interested in an episode on your stove.

We have two carbon steel woks, and two steel Karai's (a heavier grade indian style wok). Basically, I like a wok that's thick enough that it doesn't flex too much, but is light enough to flip food and toss. I like a wooden handle as well.

As you'll soon see, we're in the process of moving, and we have a Wolf stove in the new place. We'll see how we like it, and maybe do a comparison review.

You do a great job! Too many videos from others where they show you something, you want them to just be quiet and get on with it. You get a pass however. Listening to you is casual and relaxing, and you don't waste time on useless talk. You should have far more than 5,000 subscribers.
