Overnight Brisket on the Pitboss Pellet Smoker
Easy, No mess brisket on the Pitboss Pellet Grill.
Season with pepper and your favorite rub
200F for 12 hours
Internal Temp to 165F-175F
Pull off and wrap in butcher paper.
2.5-3.5 Hours till internal temp reaches 205F
Let rest on counter for 1.5-2 Hours
Move to cooler - Let rest 3+ Hours
Pull out - Slice or chop - enjoy!!

    Question. Fat side down. Have you had any issues with it drying out because the fat side so close to the fire box ? Have you cooked it fat side up but raised off the grate .?

    Thanks for the video! I've had some great results running it at 175 for 12 hours with the super smoke setting on. And then moving it up to 225 or 250 until it's 170 to 175 internal. Then wrap, and depending on when I want it to finish, go up to 250 or 275. Ill pull it off closer to 200 internal because its already had so long to render the fat. Always creates a deep smoke ring and amazing flavor.

    how did the hopper handle the all night smoke? did you have any issues with the feeding of pellets as in feeding from center and leaving pellets piled up on sides?
