This is a new video showing the knife post thinning. Shinogi is eased. The knife cut really well before thinning, but performs even better now. This is a compliment to a similar petty from Fredrik Spåre. The one from Spåre is a bit thicker, and has been one of my most used knives. Wanted a thinner one as well, so I ordered this petty from Heldqvist.       Not sure about steel. Probably 26c3 since it's a common steel for honyaki. The sharpness isn't remarkable in any way with this knife. It's sharp, but not sharper than any other knife on my channel. What sets it apart is that it has a thin geometry. Not sure how long it will stay sharp. All my custom knives have had good edge retention. This is just a loaner, so I'll not be able to test retention in any meaningful way.

      I have posted three videos recently. There's just not as much happening on the knife front. I've tried most of the knives I wanted to try, so it'll be a bit slower here from now on.

      @@korvid On the point of knife sharpening, how would you normally deburr the knife and how long/many strokes would you do it? :B Does a leather strop with compound crucial for this process? I am currently trying to deburr a knife on a stone with edge leading strokes and having quite of bit of a problem to remove the burr.       Daily deba. Joking name for a double bevel extremely thick gyuto/santoku. So quite a bit away from a normal deba, but very useful.

    Can somebody explain me what's the point of Shapton glass stones? They have glass on one side and sort of stone on the other. Are both sides supposed to be used for sharpening? In this video I see only the stone side used, on other videos I saw people using the glass side

    Interesting video and technique. I also use the Shapton Glass 220 for the occasional dull edge, but for touch ups use the Shapton Pro 1000 and just strop on cardboard or a very fine stone.

      Not sure if you found out, but the maker is Fredrik Spåre, Gyuto 230mm OB Steel Limited Edition. I know you go ham in search of the best... good luck if you're ready to go down the metallurgy rabbithole along with custom Blacksmiths.

    This knife is super-thin and razor-sharp, able to make the most precise cuts. Therefore I can't understand why the tester cuts off unnecessarily big pieces from the carrot and the onion which could well be used in a meal.

    On the left side, I noticed the victorinox marking is removed, you didn't thin that close to the spine right? That was just polishing to make thinned part blend in with the rest of the knife?

      Info is in description of all silent cutting. Steel is 2092. A Swedish equivalent of 52100.

      One of the Isasmedjan on my channel is in TNT666. It’s very difficult to evaluate steel just cooking at home. I’ve been surprised by a water quenched 26c3 from Spåre and a 1.2519 from Smedja Aspen. But it’s difficult for me to say that any specific steel is better. All are good. Trust the knife maker if he suggests a steel.

      That is just not true. I pointed out that it’s difficult for me to se difference between steels, highlighted two blades where I feel like the steel is good, and suggested to go for a steel that the knife maker recommends.

      TBH. When I tried to sharpen like this and it worked, it blew my mind. For a damaged knife it’s much better to round the corner of a 500 stone or so, as the paper wears way too quick. Did a video to show with stone, but it didn’t turn out good so I’ll redo it.

    Be careful using this method on larger shears and scissors - they will have a complex grind. This is so that the scissor blades only touch at a single point that travels down the blades as they close. You can tell if your scissors have this by closing them then holding up to a bright light edge-on so you look between the blades. If you see light between the blades (they don't touch along the entire length when closed) don't do this method.

      This is not necessarily a size thing. I also go through what scissors I recommend sharpening with this method in the second minute of the video. I show that the method is suitable since the edge is broad and straight, then I show that it’s more difficult on a narrower edge and finally state that I not recommend this method for convex scissors. Did I miss any info in the video?

    I cut out a thin strip of sandpaper and hold it between my fingers and sharpen that way…. Then slant the peeler the other way and deburr Actually come to think of it, nowadays my peeler is my tiny 60mm knife. The peeler only comes out for carrots.
