🌞 Barista Opening Shift Vlog at Specialty Coffee Shop | How to Dial In | Melbourne, Australia
Hi Happiness 👋
This is “Happy Haelibo” about Coffee and Life.
THANK YOU so much for staying tuned for my new video.
And, HELLO to those who see me for the 1st time!
It's been a while since I last posted my video.
I've been busy gaining real life experiences as a barista in the last one year, and now I am back to you to share my journey.
I am currently working as a barista at ST.ALi, a very famous specialty coffee roastery cafe in Melbourne, Australia.
As you know, Melbourne is known as the capital of coffee in Australia and well-known around the world for its high standards of coffee. ST.ALi gets a big credit for contributing to its third wave coffee movement.
In this episode, I want to share my life as a barista focusing on my opening shift in a vlog style.
I will share how I open the shop from opening the door to dial in.
I am sure a lot of it will be applicable to the most of barista opening shifts.
I hope you find this episode helpful!

I'm 57 years old and I just started doing pour over coffee about 3 days ago. I watched a few videos and read a couple articles and I've learned one thing. People make this way more complicated than it really is. The trick is to figure out your ratio I do 18 g of coffee to 300 g of water and it works perfect. On my personal channel that I'm posting from I realized that people tend to do this especially in fragrances which is another one of my hobbies people tend to overcomplicate that as well.

I'm sorry but this is just an ignorant take. Dunning Kruger is strong with this one. Come back to this take in a few months once you've gotten better at brewing and tasting, you'll see how off you were. It's so easy to choke a brew with too much agitation (particularly with Ethiopian beans that produce a lot of fines) and get a horrible brew when you're living on the edge of the absolute sweet spot of your recipe

Gonna give this thing a try for sure, I got a De Longhi latttisima Nespresso machine with inbuilt tube milk frother, and also a old Nespresso aeroccino, but i never get the results i want, so eventually i end up going to a real bar to get a nice cup of cappuccino. But it's getting more and more expensive in the end! BTW thanks for the video. I've subbed ❤

About how course it is: Depends on the coffee and the grinder. The Zp6, for example, can make coffee in the same time with a less coarser coffee. And different coffees benefit of different adjusts in the grinder. There is no closed margin to the grind size. Just time and proportion of water. The rule is: it is coarser then tradicional, not the same he used is championships.

For me its really difficult because Im using only 150 ml of full fat milk for one cup. And the french press cant reach the bottom. The manual frother milk would be easier for this i guess. But I tried it by pouring the milk into the half of french press. And all I did was pumping in the middle (inside of the milk). And the texture was amazing. For the first time there wasnt too much of a foam at the end. I first though its too thin but it was almost perfect. Maybe a few extra pumps would do the trick. So I guess my advice here is just be patience. Each french press has a different size, everybody is using different milk and not every french press can reach the bottom. But with practice its possible to achive it.
