Thank you for sharing the background information of your business, how it progressed and capital outlays. I’ve been an amateur baker for over 15 years, was tempted to try a micro bakery but was working full time. Now I have a 5 foot bakers bench in my farmhouse kitchen, a 6 quart kitchen aide mixer and do all my sourdough and straight dough baking in steel roasting pans in my Breville smart oven pro. I use Ceresota and king Arthur flours. My breads are given out as gifts and everyone loves them. Makes me happy. Thank you…Joseph.

I wonder if it would be more efficient To move the oven to the right side And put the refrigerator to the left side, of the work table You would have to rework the refrigerator door so it opens to the left Seems like it would be a more Even Flow to both appliances When loading and unloading Just my two cents
