New Mexico is like Oklahoma, very simple laws it's almost criminal that more people aren't doing this! Considering how healthy it is to bake for themselves vs store bought. I can't because I don't have running water or electricity but if I did, I'd be doing the Micro bakery! And the more I watch your content the more it seems possible. Thank you!

These are really great tips! I currently live in Florida and in the same way that you did, started a micro bakery without really meaning to start one. For my neighborhood and a few others just outside of it and have had a lot of success. The only thing really holding me back is working full-time. We are planning a move to Lancaster county Pennsylvania in 2025 really hoping to start a legit micro bakery from there. Your tips are extremely helpful! I have a few questions for you. Do you recommend buying a bread oven brand new or is used OK? Also, do you have a space where there are links to all of the materials you use even things like the work tables and such? And one more… How do you ensure such a beautiful deal that is easier to work with? My sourdough comes out beautifully, but the dough is very sticky to work with.
How many of your new neighbors became a regular customer? I’m thinking of making mini loaves (half size) for my neighbors but am kinda nervous none will become a regular. I do live in a large neighborhood so I would just start with my street and work my way outwards if it brings more customers until I hit my baking capacity.
I'm curious what hydration level you settled on. I'm trying to do 80 loaves per week. I'm thinking around 76% should be ok? Or is that too high to consistently deal with from a small home kitchen? Your dough looks like it would be a pleasure to work with, by the way. So nice!
