Dr. Monique May, the Physician In The Kitchen, is a plant-based board-certified family physician who enjoys helping busy households embrace healthy plant-based eating without impacting their hectic schedules. After practicing clinically for more than 20 years and embarking upon her own plant-based journey at the age of 50, and in the middle of a global pandemic, Dr. Monique then attended a vegan culinary school, where she learned how to prepare plant-based meals that are both delicious and healthy. She is a two-time best-selling author, and her first cookbook, Doc Fix My Plate! The Physician In The Kitchen's Prescriptions For Your Healthy Meal Makeover, is now available. It includes recipes inspired by family favorites passed down from her grandmother and mother, and other "vegan-ized" versions of common dishes.

What is the nutritional value of the greens raw ? Can you do them like coleslaw with a vinaigrette ?
Thanks for the question. 11 calories per cup and essentially no fat. 2 grams of carbs (most of that is fiber). You sure can! I would treat them like kale and massage them in a little bit of olive oil, or just chop them (or process) into small pieces because they can be very chewy. Thanks for watching!

Bravo, ma dawlin’ !! 29 years in New Orleans before I left. Developed my sincere love of all the greens. And like you were talking about, taught myself by using ham hocks, and then, when I was making a feeble attempt at lightening up, by using smoked turkey legs or wings. Mine were party favorites. Completely vegan since 2015, no looking back, no regrets. Love my greens , but I gotta say this preparation looks my-t-fine. Gotta vegan pot luck coming up next weekend. I will do this dish. And your mission of nutritional healing has been my focus too, since I made my shift. I’ve been subscribed for a while. Thank you for putting this out. Question though: Going to the pot luck, I’d love to take a printed list of the vitamins and nutrients that you listed. Would you be willing to share a pdf your notes of these attributes? If not I can go back through and take copious notes for the printout. Just a bit busy with a business. It’s a funny little dynamic with these plant based pot lucks .I am way out in eastern Oregon now. This is cattle country. And these pot lucucks are at the local Grange Hall. There are only a few of us vegan advocates up here. So, we organize these food for health get togethers from time to time with the locals. Don’t think we have converted anyone yet, but we get to highlight the otherside of the coin. and give testamy to the health journey

We can't survive just eating vegetables. If you where in a survival situation and didn't get enough protein and fats , you will die. You really should do more research

Really bitter, you're good if you can eat it.
Just simple stir fried bitter melon for me with one egg.No other veggies needed . I dont like it over cooked. Cut it super thin for quick cooking. I dont know why but i like the bitterness of it😂

Yes I would wrap in parchment paper and seal in an airtight freezer bag. Remove as much air as possible. Should be ok for about a month.
