    Great video! I didn't know about that tightening of the skin method. Pretty cool. However I don't cook duck very often. I think you need a blow torch, I think it would have worked faster than the broiler. Just an idea, they make what is called a Searzall attachment that takes the flame and evenly spreads it out. I love mine.

      I assume you mean "store bought?" I have the same dilemma as you, rarely use buttermilk what I do instead, when I need butter milk is this => tinyurl.com/MakeButtermilkAtHome.     I have a question, what is the difference between yams and sweet potatoes? Is it like the difference between dressing and stuffing? they are the same thing just different names?

      That is a great question, and one that confuses many people. While the two look similar (at least the orange varities with which most people are familiar) these are actually the tubers of completely different plant families. Yams originated in Africa and Asia, while sweet potatoes in Central and South America. When slaves from Africa encountered sweet potatoes they referred to them as 'yams' because of the similarity to the product of their homeland. So, when you see 'yams' in the grocery store, there is a 98.2% chance these are actually sweet potatoes. Thank you for watching! :)

      www.zeroacre.com/ It is a cultured (fermented) oil derived from sugar cane. Has a MUCH smaller environmental footprint than seed oils. It's my new go-to.
