I love this but when you say “they put an extra chromosome in there.” It sounds an awful lot like GMO, CRISPR type insertion. The reality is they chemically induce a group of tetraploids from natural diploids. Then they select mostly for survivability. Then they breed with diploids selected for desirable market characteristics. So they breed a mule of sorts. Instead of putting energy into reproduction they put energy into muscle growth and these oysters can be harvested all year long. You can also farm novel strains with this method without worrying about contaminating the local species of oysters. This is similar to how they make seedless watermelons and many other types of agricultural cultivars.
