One important point is that water temperature is recommended to be 80 C or a little bit lower so that the delicate matcha is not burned by higher temperature water and losses its bright green color and turns bitter.

I feel like 60 ml of water for 2 grams of matcha powder is too low. Can we do like 2.84 grams (half tsp) of matcha powder for 118.294 ml (half cup) of water?

Also my First degustation of that tea;) I steeped Anji Bai also in a tall glass but at a higher t* (~180+), covered the glass and waited till the leaves began to dance (which took a few minutes…). The liquid was light-yellow, even though I added less tea than you did (probably around 2 tea scoops.) The aromatic notes were quite pronounced from the 1st steep. I just kept adding same t* water and let all the leaves to dance all the way to the bottom as I kept sipping it. Very enjoyable, cozy and warming experience, just as you described yours. But I find that this tea requires more patience/time with its brewing compared to other green teas. Really enjoyed your description of the tasting notes and aroma; it was helpful to me. Also, grateful that you mentioned your association with Sakura sencha. Now I have another tea to look forward to sample;) the name alone is just so beautiful ✨🙏🏻 Thanks again and happy sipping 👋🏼🤍🫖

Yes! YES! You understand the experience that is Chai. In America, the black pepper and ginger are,for the most part, ignored. Get a “chai” from Starbucks,it’s nonsense. I tend to replace the ginger with Tumeric, but a proper chai has that heavenly kick,it cascades over you,an experience unlike any other.

I don’t think it’s originally an aesthetic thing at all. If you only use your thumb and the first two fingers, the pinkie almost naturally raises up. You have to consciously hold the pinkie down. Seriously, try it,the pinky kind of just raises. Ok it became associated with higher classes, but only because they were the ones drinking tea,so it was observed, and the manifestation stuck,a new bit of physical language entered the diction.

Last September,2022,in London,I was visiting a VERY famous TH-camr,and of course she offered me a cuppa. She was baffled that I desired no milk or sugar, just pure. I told her,try it as is,you will appreciate the unadulterated flavor. She did,and was amazed! She was so indoctrinated into English milk and sugar, that she never had pure tea! It was an Earl Grey, and, despite being from a tea bag,it was a delight.
