    You can refreeze meat if you thaw it out in the fridge but not if you thaw it out in a microwave. Microwave thawing meat means some of it has remained raw while parts of it may be partially cooked and you are just asking for salmonella when you put raw meat next to cooked so that's a no no.

      @@tcrafts-h1y I agree with you thawed meat next to cooked ones are no good. I try not to refreeze thawed meat, but now that my in laws moved in, we eat so much meat, we don't need to freeze meat anymore

    Wonderful recipes! So clever to make it a trip around the world. I do wonder why so many "rice cooker" recipes have to include rice. You can actually make many amazing things in the rice cooker with no rice at all!

      Its called VitaClay, its a clay pot smart cooker. You can find them in Amazon or their website. I recommend getting the 8 cups because the pot is thicker than regular metal pot amzn.to/4gWDBPM

    Seared steak sushi with Ponzu sauce: 1. 8 oz New York steak or any cut you like (I tried this with A5 Waygu in a restaurant and it taste like butter) 2. 1 cup Japanese short grain rice (cooked to your liking) 3. 1 tablespoon rice vinegar 4. 1 teaspoon salt 5. 1 tablespoon sugar 6. Ponzu sauce to taste, (I did like 1/4 teaspoon for each piece of nigiri) Topping: 1. Chopped garlic 2. Chopped green Onion 3. Wasabi Steps: 1. Combine cooked rice, vinegar, salt, and sugar together. 2. Thinly slice steak 3. Shape the rice ( about 1 tablespoons each)
- It is best to wet hands prior to shaping rice to avoid rice sticking. 4. Place 1 slice of beef onto each ball of rice. 5. Use a kitchen torch lighter to quickly sear the steak in a tray that is heat safe (I used a metal tray) 6. Top with ponzu sauce, chopped green onion, garlic and wasabi.

    What’s in the sauce?

      It’s a Japanese citrus soy sauce. This is the one I use and you can get it at major Asian Supermarkets or Amazon amzn.to/3No6Q0l

    If you like my one pot Rice Cooker meal, but want to use the instant pot/ pressure cooker/ clay pot slow cooker, here is the conversion. I have included both recipes. Instant pot: 2/3 cup of fluid for every 3/4 cup of soup base with the same amount of seasoning Ingredients: - ¾ cup of rice - ½ lb shrimp or chicken - 1 cup bean sprouts - 6 tofu puffs, cut in half - (Optional) 1 cup white beech mushroom Chicken Marinate (with 1/2lb chicken) - 1 tsp salt - 1 tsp cooking wine (I use Shaoxing wine) - 1 tsp sesame oil - 1 tbsp light soy sauce - 1 tsp white pepper - 1 tsp garlic powder - ½ tsp chicken bouillon Shrimp marinate - 10 shrimps - 1/2 tsp white pepper - 1/2 tsp Shaoxing Wine - Salt and pepper to taste - 1/2 tsp sesame oil - 1/2 tsp Garlic powder - 1/2 tsp ginger powder Instant pot Soup Base: - 2/3 cup water - 2 Tbsp Tom Yum paste Instant Pot Steps: 1. Mix soup base ingredients in a bowl 2. Wash 2/3 cup of rice and add them to the pot 3. Clean, devein, dry, and marinate prawns 4. Add all ingredients on top of the rice 5. Add soup base 6. Cover the lid and turn on the cooker to low-pressure rice mode (8 mins) with the vent open 7. Once the machine beeps and everything is cooked, vent them immediately 8. mix them, and enjoy! Rice Cooker soup base: - ¾ cup water - 2 Tbsp Tom Yum paste Rice Cooker Steps: 9. Mix soup base ingredients in a bowl 10. Wash 3/4 cup of rice and add them to the pot 11. Clean, devein, dry, and marinate prawns 12. Add all ingredients on top of the rice 13. Add soup base 14. Cover the lid and turn on the cooker to regular rice mode 15.     I fell in love with the ginger pork rice bowl when I visited Japan and I have been making it ever since. Ginger is my biggest tip on removing boar taint as mentioned many times and this dish is amazing with miso! This is my sauce-less version, kind of like a BBQ but I also have one with sauce which is perfect for a rice bowl Ingredients: - 1 lb pork shoulder - 1/4 cup grated ginger juice - 1 Tbsp sake - 1 Tbsp Japanese soy sauce - 2 tbsp miso paste - 1 tbsp mirin/ sugar Steps: 1. Thinly sliced pork shoulder 2. Combine marinade ingredients with pork and let it marinate for 4 hours or ideally overnight 3. Heat the pan with a medium-high heat and add a little oil 4. When the pan is hot, add the pork and fry both sides, until it is cooked and golden brown 5. Serve with rice and vegetables

    This is great! Your meals are a lot more in line with how I cook than many other budget recipes -- largely because a family member can't eat gluten, so bread and pasta are not budget for us! But we have gf soy sauce (and even panko, though it's a bit of a splurge), and we love vegetables. Thanks for this helpful video. I've subscribed.

    Sometimes when I am lazy, I just pan fried some homemade dumpling from my in laws, mix some dipping sauce, boil some veggies and toss some Hong Kong style noodle. Totally my C.H.E.F meal (cheap, healthy-ish, easy and fast)😊 Dumpling sauce: - 1 teaspoon sugar - 1 tablespoon hot water - 2 tablespoons soy sauce - 1 teaspoon rice vinegar - 1 teaspoon chili oil - 1 teaspoon minced garlic - 1 teaspoon toasted sesame seeds - ½ teaspoon sesame oil Steps: 1. Dissolve 1 teaspoon sugar in 1 tablespoon hot water. 2. Stir in soy sauce, rice vinegar, chili oil, minced garlic, sesame seeds, and sesame oil.     These cheesecakes are so soft, fluffy, and jiggly! Feels like it melts in your mouth. The recipe is really easy and you can make this in your kitchen. Ingredients Cream cheese mix: - Cream cheese 180 g - Unsalted butter 30 g - Milk 80 g - 3 egg yolks - 1 tsp vanilla extract extract - Cake flour 15 g - Corn flour 10 g Egg white ( beat to soft peak): - 3 egg whites - 1/4 tsp cream of tartar or 1/2 tsp lemon juice - Sugar 60 g Steps: 1. Preheat oven to 230 F 2. Separate egg yolk and egg white 3. In a double boiler, melt butter, milk, and cream cheese and mix until it’s smooth 4. Take the mixture out of the double boiler 5. Add egg yolk and mix them one at a time 6. Add flour in 2 parts 7. Add vanilla extract 8. In a stand mixer, add egg white, cream of tartar, and 1/3 of the sugar, mix at medium-high speed and slowly add in the rest of the sugar. 9. Mix until you reach soft peaks 10. Gently fold the egg white into the cream cheese mixture 11. Separate the mixture into 4 ramekins 12. Add boiling water in a cake pan about halfway of the ramekins 13. Bake for 70-80 minutes at 230 F (put a toothpick in the middle of one ramekin, if it’s clean when you pull back, it’s good) 14. Optional: Turn the oven up to 400 F and bake for 1-2 minutes until you have a lightly brown top 15.     these all look amazing. I definitely need to try the pho rice. Honestly, I think gatekeeping a food/cuisine is ridiculous. Many "classic" cultural dishes today came from an interpretation of dishes from other origins or has already adapted/evolved from what it used to be. If it taste good and you're not mocking the culture, you shouldn't have to apologize.

    Growing up in Hong Kong, Char Siu, or barbecued pork remains one of my favorites. Making the BBQ pork with an air fryer cuts the cooking time down by half and it’s perfect if you want a quick meal! Adding a fried egg and Yu choy over rice makes it the perfect bowl for lunch or dinner. The perfect barbecued pork has a vibrant red color, is covered in honey on the outside, and is soft and juicy on the inside. The key to successfully making delicious and juicy homemade barbecued pork is using the fattier parts of the pork. Marinate the pork in the sauce overnight and add the sauce regularly during the baking process. You can enjoy the delicious barbecue pork at home! Ingredients: - 2 pounds of pork shoulder (or other fatty cuts) - 2 teaspoons of honey Marinade: - 1 teaspoon salt - 3 tablespoons brown sugar - 1 teaspoon allspice - 2 tablespoons of light soy sauce - 1 tablespoon hoisin sauce - 1 tablespoon oyster sauce - 2 tablespoons molasses - 2 tablespoons Shaoxing rice wine - A few drops of red food coloring (optional) Steps: 1. Set the air fryer at 385°F for 20 minutes 2. Put the char siu in the air fryer, I cut the 2 lb pork shoulder in half following the grain 3. After 10 minutes of cooking, Brush the 1 tsp of honey on top of the pork using a brush. Flip the meat (honey side down) and add it back into the air fryer. 4. After 10 more minutes of cooking, brush the remaining 1 tsp of honey on the top of 5. Add the tray back into the air fryer for 1 to 2 minutes to get a final char. 6. Wait 10 minutes before cutting 7.       @@cantohousewife can you cook with the vent open? It won't come to pressure. Rice can cook in 3 mins and natural pressure release. So I imagine the liquid would need to be adjusted as the instant pot doesn't lose liquid like the rice cooker , which evaporates via the steam vent , and also the timing.

    Growing up, Chinese tea egg gave me a lot of great memories. It is a weekly snack at the local convenience store or a must-have when we are passing through the Chinese customs from Hong Kong when we go on a short trip. Now that I become a mother, I have learned to make it myself and share the happiness with my family. Marinade - 8 eggs - 4 tablespoons light soy sauce - 2 tablespoons dark soy sauce - 2 bay leaves - 1 teaspoon Sichuan peppercorns - 1 star anise - 1 small cinnamon stick - 2 teaspoons sugar - 1 teaspoon salt - 2 tablespoons black tea leaves - 2.5 cups water Steps: 1. Mix all the marinade ingredients in a small pot. Cook over medium heat until brought to a boil. 2. Turn to medium-low heat. Simmer for 10 minutes. Remove the pot from your stove and let cool completely. 3. Heat a pot of water (enough to cover all the eggs) over high heat until boiling. Carefully place the eggs in the pot using a ladle, to prevent the eggs from cracking. 4. Boil 5 minutes for soft-boiled eggs, 7 minutes for medium eggs, or 10 minutes for hard-boiled eggs. 5. While cooking the eggs, prepare an ice bath in a big bowl. 6. Once the eggs are cooked, immediately transfer them to the ice bath to cool for 2 to 3 minutes. (If you don’t have ice on hand, simply run cool tap water over the eggs for a couple of minutes until they cool down) 7. Gently crack the eggs using the back of a spoon. You want to make sure the eggshells are cracked enough so the marinade will reach the interior, without cracking the eggs apart (especially if you made soft-boiled eggs). 8. Transfer the eggs to a quart-size ziplock bag, then carefully pour in the marinade 9. Marinate 24 hours 10. Peel the eggs and enjoy them for breakfast, a side dish for a meal, or a quick snack 11. You can store the leftover eggs in the marinade for 4 to 5 days in the fridge. The marinade will help with preserving the eggs.     Mala fried chicken is a spicy and numbing dish rooted in Sichuan cuisine, known for its bold, complex flavors. The term "mala" refers to the signature flavor profile: "ma" (麻) for the numbing sensation from Sichuan peppercorns and "la" (辣) for the fiery heat from chili peppers. These bite-sized chicken pieces are my husband’s favorite and it’s definitely a unique eating experience. Ingredients: - 3 slices ginger - 1 scallions (chopped) - 10 dried Szechuan red chili, chopped (adjusted to your spice level - 1 tablespoon peppercorn powder (adjust to how numbing you like) - 5-8 gloves of garlic (minced) - Cooking oil - 1 lb chicken thigh cut into 2 inches pieces Chicken marinate: - 2 tbsp soy sauce - 1 tbsp juice from grated ginger - 1 tsp garlic powder - 1/2 tsp white pepper - 1/2 tbsp Shaoxing wine - 1/2 tsp five spice powder - 1/2 tsp white pepper - 1/2 tsp salt - 1/2 tsp sugar Egg wash and Batter: - 1 tsp white pepper - 1 tsp garlic powder - 2 cups flour - 1 tsp chili powder, optional - 1 egg for egg dip Steps: 1. Cut 1 lb chicken thigh into similar sized 2″ pieces. 2. Marinate chicken pieces for at least 30 minutes in the refrigerator. 3. Heat 2 inches of oil in a large heavy frying pan or pot over medium-high heat for about 10 to 12 minutes until the oil temperature reaches 350ºF. 4. If you don’t have a thermometer, test it by dipping one piece of chicken in the oil. If it bubbles, it is ready. 5. While the oil is heating, mix white pepper, garlic powder, flour, and chili powder on a plate or parchment paper. 6. Dip the marinated chicken in the egg wash, then dredge the marinated chicken in flour and pack well, leaving no bald spots. 7. Add the coated chicken to hot oil one by one. 8. Fry them until all sides of the chicken are golden brown and crunchy, about 5-7 minutes 9. Take the chicken out on a tray lined with a paper towel to absorb the oil 10. Heat oil in a large skillet over medium heat and stir fry ginger, garlic, and chili until the flavor is out about 2 minutes 11. Stir in chicken and combine them until every piece is coated 12.
