@@petescookhouseshow I have a long history with my beloved Canada. I spent three summers deep into the Quetico in 1972-1974. I went to racing school in Mont Tremblant in 1979. The Canadian Military was a client of mine about 15 years ago. I fly a Canadian flag. On Wednesday a friend of my oldest son is bringing me a pound of Montreal Smoked Meat. I brag about which people and things are Canadian. Raymond Massey is one of my favorite actors, and I even like the Raymond Massey cocktail. The only thing I don't like about Canada are its restrictive gun laws, but then again I'm from Georgia. If a Georgia cop stops you on the highway and by chance you have out-of-state plates and he asks you "Sir, do you have a gun?" and you say "No" he'll just go "Well hell, son! Here, take one of mine. Welcome to Georgia."

Pointers for next time. When mixing the spices into the meat you want to leave the meat out if it was in the fridge for 30 mins or so, no too longer due to food safe but long enough to take the chill off the meat. Next, when you mix the meat you really need to get your hands in their. The idea is you need to turn the meat into almost a paste. Breaking and ripping the meat fibers as you squeeze the meat between your fingers. You'll have to do this for 8-10 mins. Really get in there! (the taking the meat out to warm up prevents your wrists from hurting due to the cold) You'll know what I mean when you run into it :) What this turns it into; is a packed dense meat vs a spiced hamburger loaf that crumbles when you cut it. Let the meat cool down and slice when cold. However, if in a rush you can let it cool for 15 min and then cut. The difference in the strips is night and day. Based on your meat and spice I'm going to go on a limb and say that meat was quite spicy! I made a little app that I use for my spices, you can use this to tweak your Donair meat as needed. Just what ever you do, print it! Then next time, note if it's too spicy, to salty and tweak it. App here: www.backwardsone.com/donair.html You can enter in your meat in KG or LBS then type in the LBS value. This will auto provide you with the amount of spices you need based on the amount of beef you have. You can use this combo of spices but I tend to free hand my spices so this is the first time I'll be using the app so it may have to be tweaked however it should be a good baseline. (I haven't tested it but should be close) Also, how do you find the 1 table spoon of garlic powder in your sauce? I tend to just put a pinch of Garlic Salt (if anything). 1 Table spoon seems like it becomes a sweet garlic sauce at that point? As for cooking the meat, no knock on your way! I didn't even think to cook it in a rotisserie. Interesting! The way I do my meat in the oven is I tend to do my meat in 5LB lots so I'll just pack the meat into a pan so that the meat is around 1.25 inches deep in the pan. (I like the Nordicware 59950 Prism Baking Pan on Amazon) it's a 9" x 13" pan that fit's 5LB's of meat really well. Fire it in the oven at 375 for 35 mins, check to make sure it's hot in the center to touch and adjust time as needed. Sometimes I'll do 325 for 45-50 mins to limit the shrinking. Last few notes: Tomato and Onion should be diced of course and it tends to go on the pita itself (not on top of the meat) Top of the meat is the Mozza cheese but don't put the sauce on yet. Wrap it all up and toss it back in the oven on 475 for a bit to melt it all together. Once you open up the melted goodness THEN you put on the cold sauce on top. Lastly, the bread should always be PITA bread. The stuff you have is very thick/big. should be the thinner Peta! Again, great to see you try this! It took me many try's to get a product very very close to the real thing. Fun fact: Even after doing this over 30 times, I'm STILL bit by bit homing in tweaks.
Hey, Thank you for sharing your version of the Donair. It reminds me of the ingredients on the Donair pizza. Never saw a Halifax Donair with mozzarella cheese on it, and all of the versions had onions and tomato's on top of the meat not under it, but hey maybe worth trying it out !
