How to Make Homemade Pretzels & Pretzel Bites | Chef Flora's Kitchen & Bakery

Recipe:
Pretzel dough:
2 1/4 tsp (11 mL) dry active yeast
1 cup (236.5 mL) warm water, more if needed
1 tbsp (15 mL) unsalted butter, melted
1 tsp (5 mL) white sugar
3 cups (360 g) flour, more if needed
Baking Soda Bath:
2 cups (473 mL) water
2 tbsp (30 mL) baking soda
Topping:
Himalayan pink salt (optional; you can use the amount you want, but using 1 tbsp (15 mL) is recommended)
6 tbsp (90 mL) unsalted butter, melted
Directions:
Preheat the oven to 475°F (246 C). Spray a cookie sheet with cooking spray or line with parchment paper.
Whisk together the yeast, warm water, and sugar in a bowl. Add the flour. If dough is a little too floury, then add a little bit more warm water. If the dough is a little sticky, then add a little more flour.
Lightly grease the bowl you are using using cooking spray, then place dough back in the bowl. Damp a cloth and put that over the dough. Let rest for about 15 minutes.
In a pot, boil the water with the baking soda. Once the baking soda is mostly dissolved, take the mixture off heat and pour into a shallow dish (or you can leave in the pot).
After about 15 minutes, take the dough out of the bowl and flatten slightly with your hand. Cut dough into 8 sections like a pizza. Using your hands, roll each triangle into a long rope, making it about 19 inches (48 cm) to 20 inches (51 cm) long. If you are going to be making pretzel bites, then take off a little chunk and flatten it with your thumb some, and you can make the amount that you want.
Carefully dip the dough into the baking soda mixture, then place it onto the prepared cookie sheet(s). Using a pastry brush, spread some of the melted butter on all of the pretzels/pretzel bites, then sprinkle salt on it.
Bake pretzels for 8 to 9 minutes or until golden brown.
