What about the gelatinous stuff under the skin? Do you take that off?
If the octopus is not pre cooked before the pan cooking it's going to be cheer as hell
Do you have to wash the juice/gel from the octopus? Isn’t it included in the nutritional label since it’s the “natural juices” from the octopus?
I I found best to rinse that juice, possibly from the cooking sauce, then pod dry.. I also cut the legs in half so the the thin parts do not burn by the time the thick ones sear . It seems that the octopus comes a little undercooked, so a good balanced sear is best.

Hi again, I made the remainder of the octopus again tonight, but this time used your marinade recipe and searing instructions. After marinating, the pulpo, I used the remaining marinade as my salad dressing on an romaine and radicchio salad. All came out great. I'm pretty sure the marinade/dressing will go great on a rack of lamb too. That'll be next. Thanks
I just read one of the comments below, and indeed we are using the same octopus from Costco.
This evening's dinner was octopus from Costco. The package said "ready to eat" so all I did was make a lemon vinagrette to put on it. There's certainly enough leftover (plain) for me to try this. If I had seen this first, we'd have had this for dinner tonight. My first question to you is that the only octopus I've ever seen at Costco is the prepackaged "ready to eat" tentacles. Is this what you used? Second, my other thought is to cook this for at least an hour or more in a fra diavolo sauce. My thinking here is if it's anything like squid, then long-simmering in a sauce will make more tender. Am Ion the right track?

How do you keep it tender?
Too much added salt. Olives, capers have salt in their curing method. Too much added sodium in diets is not good for people.

I haven't cooked steak in the pan in a while, but I always had a problem with burning the butter almost immediately before basting. For some reason, I never thought to lower the flame before adding the butter to prevent that from happening. It's such a simple step that a lot of amateur cooks might overlook.
Hi Shane, great question yes that is the reason to lower the heat( you want the butter to give and have steak, garlic, shallot, thyme flavor not burnt butter) also while basting the steak will be more even cooking NO GREY!

Trying this with three baby octopuses tomorrow. I have fresh sweet 100s to fix with it. I will thaw the octopuses overnight and fix tomorrow with fresh herbs. They're vacuum packed and will be excellent. Hopefully, they'll turn out delicious.
