How incredibly scary. Poor baby and poor momma. Thank goodness that he is recovering. Hopefully you can go home soon to get real sleep. It’s impossible to sleep at the hospital. You’re doing a great job. I will say a prayer for your boy.

Get flour and add some garlic, cumin, and onion powder. Dip roast in it on all sides and sear. Put it in a slow cooker to which you add cream of mushroom, green Chile's fresh (roasted if you can get them) or frozen, quartered and sliced onions, fresh minced garlic, mushrooms and more cumin to taste. Add a can of water or broth of your choice. Cook on low all day until two hours before serving. Add potatoes cut in big chunks. It is absolutely delicious. It also freezes well for later. So easy but so good. Check water level periodically. You don't want too much liquid because it will make it's own gravy but too little and it will be too dry.
