Croatian Shaksuka, Patakenjac
Croatian shakshuka, or patakenjac, comes from the island of Vis. A beautiful island, that also happens to be the furthest inhabited island from the mainland. There are a lot of thins on Vis that you can't find anywhere else, and patakenjac seems to be one of them.
The dish itself is very simple, sweat an onion and bell pepper til soft and add tomatoes. Crack eggs into the sauce and cook til done. Really simple, which shows its humble beginnings as a meal born out of necessity. Simple to make, but incredibly flavorful. And nutritious. Make sure to eat with bread and dip in the runny yolk, it's the best part of the egg.
The recipe I show here is as simple as it gets, but feel free to add more spices and flavors if you wish. A few cloves of garlic or maybe a teaspoon of paprika would add a little something extra.

Upgraded Stuffed Peppers
มุมมอง 4721 วันที่ผ่านมา
In honor of one year of Chef Tyler's Croatian Kitchen, I decided to revisit the first recipe I shared with you all: stuffed peppers. Always the Croatian favorite, I thought there could be a way to improve upon them. And what better way to do so than to add cheese? These stuffed peppers have all the tasty goodness of original stuffed peppers, with the added bonus of melted cheese on top. Cheese ...
Something You've Never Seen! Pohani Tunj
มุมมอง 142หลายเดือนก่อน
I was watching a video where Chef Jean Georges talks about making a swordfish milanese. And I thought to myself, if he can do it with swordfish, why can't I do it with tuna? The Adriatic has tuna, and it's a prized catch. Why not make a similar dish to Jean Georges, but make it Coatian. And thus, this tuna schnitzel was born. I'm joined today by my friend Sara. She's an expat from Texas and has...
A Croatian Take on a Classic, Juha od Rajčice
มุมมอง 381หลายเดือนก่อน
Tomato soup is a classic soup beloved by many. So, it should come as no surprise that Croatia has it's own version. In the typical Croatian fashion, the ingredients speak for themselves. The seasoning is very light, only salt and some pepper, which allows for the tomatoes to really sing. The soup is served with a type of soup dumpling known as žličnjaci, a word as hard to say as it is to read. ...
Pastries as Soft as a Pillow! Jastučići
มุมมอง 78หลายเดือนก่อน
Everyone likes pastries. Especially these ones. Jastičići are a filled pastry that are extremely soft. There're literally the softest pastries I've ever had. The word translates as soft pillows, and it's an apt name. They're as soft as your pillow. They're filled which adds another layer to tasting experience. The filling can be either sweet with jam or savory with cheese. The best part is, the...
Who Doesn't Like Dumplings‽ Knedle sa Škampima
มุมมอง 150หลายเดือนก่อน
When you think of shrimp dumplings, Croatia is definitely not your first thought. Nor second, nor third. Probably doesn't even come to mind. But they do exist! At least here. While dumplings do exist in Croatian cuisine, they're typically sweet and served as a dessert. The dumplings I'm showing you today are decidedly not a dessert. Nor are they particularly traditional. They're a fun way to co...
Easy but Impressive, Škampi na Buzaru
มุมมอง 1372 หลายเดือนก่อน
Most of the time when a dish looks like it'd be hard to make, it is. But not so with today's! Škampu na buzaru could not be easier, taking at most half an hour. Whole shrimp are cooked in a tomato sauce, imparting their deliciousness onto the sauce and into the dish. It's one of the best things Croatia has to offer, and couldn't be simpler to recreate at home. While I might find whole shrimp, t...
Another Fun Way to Use Zucchini, Polpete od Tikvice
มุมมอง 652 หลายเดือนก่อน
Summer is synonymous with zucchini, it's everywhere. And why shouldn't it be? It's amazing. While I may have my reservations about zucchini becoming pasta, looking at you zoodles, it can be used in many fun ways. This recipe is my Aunt Sandra's, that's teta in Croatian. The patties are baked, not fried, making them potentially healthier than the fried zucchini (though they'll always have my hea...
How to Croatian Peka Inside
มุมมอง 812 หลายเดือนก่อน
There are few cooking methods more Croatian than peka. Peka involves a large 'bell', on top of which you place hot coals and embers, and underneath is a pan in you cook your food. It's a technique that produces some of the best flavors. However, an outdoor wood-fired grill large enough to do peka is hard to come by. Therefore, I'm showing you how to get the same effect inside. With a dutch oven...
Hungarian Cake (Mađarica) A Uniquely Croatian Specialty
มุมมอง 2152 หลายเดือนก่อน
Despite its name, the Hungarian Cake has no connection to Hungary. Nor does it even exist in Hungary. We're not sure where the name comes from, but nevertheless it's a beloved Croatian cake. Layers of dough and chocolate cream, topped with chocolate glaze, will make everyone happy to have one. There should be at least 5 layers of cake, but more the merrier, and impressive. Serve with coffee, or...
The Croatian Version of Bouillabaisse, Brudet
มุมมอง 2392 หลายเดือนก่อน
Fish stew may seem scary, especially if you've never had it before. But I promise you, it's amazing. The flavors all meld together, and the fish becomes very tender without becoming mush. Brudet is one of the classic Dalmatian dishes, and this one specifically is my Mom's version. It may be a little Americanized, but that simply adds character to the dish. It's perfect for one of those cold sum...
The Croatian Ratatouille, Sataraš
มุมมอง 1553 หลายเดือนก่อน
Summer is here, and with it are summer vegetables! Sataraš combines these vegetables into a delectable lunch. It has all the flavors of summer melded into one dish, and is endlessly customizable. I use tomatoes, onions, and peppers; but you can add zucchini and eggplant as well. Traditionally served as a side to roasted or grilled meat, sataraš also works as a vegetarian meal served with rice o...
It's OK to Fail! My Favorite Pastry, Kremšnita
มุมมอง 453 หลายเดือนก่อน
Sometimes things don't go your way. And that's ok! There's plenty to be learned from failures. While frustrating, especially when everything goes well until the end, they're important for growth. In today's episode, my longest one yet, I tackle Kremšnita, or Cream Slice. Annoyingly the proper translation is Cremeschnitte, and pronounced the same way as in Croatian. Hopefully the 'English' name ...
The Croatian Version of Fish and Chips! Pohani Oslić s Pomfritom
มุมมอง 3203 หลายเดือนก่อน
Fish and chips is one of the most iconic British meals. But fried fish served with French fries knows no border! Today I'm sharing with you the Croatian version, which is, in my opinion, much better than the British one (sorry not sorry Britain). The dredge used is the same as all other Croatian fried dishes, that is: flour, egg, breadcrumbs. Croatia said a resounding no to beer batter, which e...
Punjene Teleće Rolade

As most less well known meals go, stuffed veal rolls are a delightful little secret. Tender veal stuffed with a flavorful combination of spinach and mushrooms. The flavors of each part melt together to make an explosion of tastiness in each bite. Rolling the meat may seem intimidating, but it couldn't be simpler. If you could make sarma, you can definitely make this. Serve with steamed rice, or...
