Persian Barbari Bread | Noon
มุมมอง 6702 ปีที่แล้ว
Iconic, Persian Barbari Bread is a thick and fluffy, high hydration bread made with both whole wheat and bread flour. "Noon" (also "nan") is the word in Farsi for bread. This Persian bread is a relatively easy bread to knead and make. It's delicious for breakfast, sliced and filled with butter and jam for a sweet option, or with feta, herbs, and nuts for a more savory option. The phrase for bre...

    My grandparents had two pomegranate trees. My grandmother taught me to do this very same thing more than 65 years ago. I've told several people and they are always amazed at how well it works.

      great@@szymon5075 very happy to hear it! I'm going to sprinkle some on some baked sliced acorn squash along with a sprinkle of chopped green pistachios and a drizzle of balsamic glaze - they are the perfect fall and winter garnish and flavor topper. Enjoy!!

    Sorry to say but this is just rice preparation and not parboiling. Parboiling is a process when rice during its production is boiled along with the paddy and then dried before packing. It is more healthy then white rice cause parboiling locks the nutrients within the grain.

      Hi Kirb - I understand! Pomegranates come in many, many variaties and are seasonal. Where are you geographically? Here in California, the best months for pomegranates are September and October although I still get lucky in December and find some good poms :)

      @@ovenhug3803 hey thank you for the reply! Outside of Houston. I'm serious, I have been to 4 top named grocery stores, even Whole Foods but you just don't know what you're getting until you get home. I'm even thinking of planting a few trees in the backyard. My wife laughs at me because of how much I love pomegranate lol. They must be great out there. Hope all is well with you.

      @@kirbharp2157 Oh really? Texas? Hmm, maybe pom trees would do well out there - I have no idea. I do know that my mom in laws pom tree did extremely well this last season. She nursed that tree and it produced about 25 huge beautiful poms! I hope you go for it and plant one soon. If so report back on the fruits of your labor!! - cheers

    why add all that salt in the beginning?

    • @ovenhug3803
      @ovenhug3803 3 ปีที่แล้ว

      Excellent question! I do not know the complete science behind it however through trial and error and by learning from old Iranian cooking techniques, soaking in saltwater before boiling it gets the best results...we want our long grain Basmati rice to be fluffy yet not sticky for Persian cuisine - our goal is for the individual rice pieces to remain long and separate from one another after the cooking steps. The salt helps the rice to hydrate properly to get these results without becoming sticky. Hope that helps!
