Why do you squeeze the cucumber?
To prevent the tzatziki from becoming too watery and diluted.
I like cubed because it's crunchy, but I don't make this. I have greek yoghurt with just mint and cucumber @@thewhiteplate

The red topping on the rice is called barberry or "zereshk" in Persian. It's a tart and tangy dried berry!

1:17 - This method for removing the skins is very fast, but removing them like this also washes out a lot of starch that makes the hummus creamier. I have had better results when I remove the skins one-by-one without putting them in water. Of course that takes a lot longer, but for the perfect hummus, in my opinion, that's the way to go if time doesn't matter.
Thanks for your comment! While removing skins one-by-one might seem to preserve more starch, the majority of it is inside the chickpea itself. Removing the skin by rubbing in water doesn't significantly affect the creaminess. For extra smooth hummus, try cooking chickpeas longer or adding more tahini and olive oil. Enjoy!

Aioli (literally means garlic and oil) is not the same as garlic flavoured mayo. Mayo is egg and oil combined. Aioli uses the same chemistry but with different ingredients making it its own thing.

It's similar to aioli, but Toum tends to have a bit more garlic and traditionally made without eggs. Both are delicious!
Aioli is without eggs though. The name literally means 'garlic and oil'.

Can you elaborate on the seven (7) spices.
It's a pre-made Middle Eastern blend that combines warm spices like cumin, coriander, cardamom, cloves, cinnamon, turmeric, ginger and nutmeg. If you can't find it, substitute with a mix of these spices, or what you have on hand from them!

Ratios may vary depending on taste, but I would say equal parts of each, except for cloves and cardamom do half amount.
i made the chimichurri earlier and it came out delicious. the only difference was that my shallot was a little bigger and i added a little bit of cilantro to the parsley since i didnt have enough. slightly different but still amazing.

Farmed salmon is the most toxic fish you can eat because the Omega 3's are in the wrong ratio
I usually use wild king salmon, which has an ideal omega-3 to omega-6 ratio. Farmed salmon is still a good source of omega-3s, but may have some downsides.
