Regarding the rice, "arroz" simply means rice in Spanish, and is not the brand name. The brand is El Avion (the airplane) which is a Bomba rice. It's a Spanish round rice which is perfect for paella. You could also use a Senia or Bahia rice which are two of the most widely grown grains in España, or you could also use Italian riso di Moninella or Arborio rice but the Bomba rice is the most authentic for paella.

I love how you used more of the carrots. You didn’t peel them and used the top quarter of green carrot tops in the carrot top pesto. Brilliant! Rethinking food and minimising waste is a key to increased sustainability.
