Welcome to Locally Raised! My name is Marta. I'm a former professor striking out on a new adventure: homesteading on an acre. I've just moved across the country to live in my childhood home and change the way I source my family's food. Join me on my journey! Always looking for ideas, didn't see a video of the completed run. We are planning a remodel of our chicken coop.
Why do you add the ACV to your jars during the overnight soak? I’m learning how to do this and I just ordered a Nesco so thank you for sharing your recipe and video.
Good question. That’s not a standard canning practice. It’s something I do because most legumes and grains have phytates-acid that interferes with absorption of vitamins and minerals in food. Soaking for 7 hrs with something acidic breaks down the phytates so food is more digestible and nutritious.

I did this just like you did. When I finished half my water was gone and the beans on top were dried out???
Sorry to hear that--siphoning is a common problem when canning. Be sure to avoid overfilling your jars and be sure the beans have had at least 7 hrs. to soak so they expanded before you can them. I also err on the side of generous headspace when using the Nesco, because I have found it a bit prone to siphoning. How long do you soak your beans? Also do you put them in the fridge to soak or just on the counter? New to canning. This will be my first time 😊
That's exciting! I love seeing people get into canning. The beans should soak at room temp for at least 7 hrs.

I dont cut the blossom end off, i just remove blossoms and stems and I use small cucumbers and a grape leaf and my pickles are crunchy.

I love making homemade crust but have the most awful time with the sides 'crawling' back down when blind baking. I use dried beans as a pie weight but it still happens. The dough will actually shrink down until it touches the beans and can't go further. Any suggestions?
I've had that happen to me, too. It's annoying when you've taken the time to make a crust from scratch! Butter is prone to causing shrinkage more than other forms of fat, so if you're using an all-butter crust recipe, I recommend trying one that's only half butter (and half something else) or no butter. Here's a video of my grandma teaching me to make a lard pie crust that's not prone to shrinking: th-cam.com/video/aHyxRxNuNk4/w-d-xo.html Other strategies to prevent shinkage: chilling dough for at least half an hour before rolling out, chilling a second time after putting it in the pan. And avoiding over-handling the dough. Best of luck!
@@Locally_Raised it is an all butter crust and I have wondered if that maybe was the issue. I'll have to experiment. The recipe is really good but maybe going 'halfsies' with another form of fat wouldn't take away from the flavor too much. I do chill the dough. Thanks for the suggestions!

I love San Antonio! It's my favorite Texas city. We were in Austin area, and now we're in Central Pennsylvania.
I have the same book as you do, I just got it a week ago. Good to know these things. I would have questioned it too, as you did. The salt should pull the liquid out of the onions a good bit, but I will no doubt feel inclined to add a tad of butter, just to make me feel good.
Thanks, that makes sense: liquid maybe isn’t necessary for carmelizing, but maybe it helps things go a little faster. I’m curious why this recipe was changed. Oh well. Happy canning!
Just found your channel, great content. You said you use a food mill when you make applesauce. I used to for many years. Now I use an immersion blender, it’s quicker and so much easier. Have a blessed day!

Hi Marta, Pam Cantrell Data Logger testing sold me on the Nesco too! I purchased mine last year, and thus far have only pressure canned my garden veggies. Now that I am more familiar with how the Nesco works, it's time to branch out!. I've been wanting to do some pinto beans, but was a tad bit apprehensive until I watched your video. I’m so glad! I was overwhelmed by the idea of pressure canning until I got the Nesco canner, and now I just love being able to have things on my shelf like beans and meals in a jar. It makes me happy to see other people using it, too. Happy canning 😊
I make a turtle cheesecake every year for Christmas. My first springform pan came from a thrift store too! and I used it for over 20yrs until it got a bit rusty and the hinge wasn't as tight. I wonder if the manicotti recipe would've been easier using the jumbo shells?
I've not heard of jumbo shells. Yes, for sure! I'm all about simplifying and saving time when I can.
Mmmmmmm the cheese cake I could get behind. I would like the other things also but my husband just can’t try new things. I made a spaghetti sauce with butternut squash and he complained for days 😢. I loved it but yeah not a staple for the list. This week I canned Apple Cranberry pie filling. We’ll have that at thanksgiving this year.
I think the cheesecake is my favorite pumpkin recipe right now. I've actually never canned a pie filling. I often freeze my pie crusts, so a pie would come together so fast if the filling was already prepared, too. Have a great week!

The kneady homesteader has a French onion soup that’s awesome, please check out her channel, her , her husband and two children were in a head on wreck, Her Husband didn’t make it… she is super sweet, I have watched them for a long time and she has been thru many surgery’s , she been on a horrible journey, but her recipes are awesome.. you will like her
You can grind the dried mushrooms to a powder and make and can meatballs with onions and beef broth or tomato sauce, it’s great and nobody knows , lol
Ooh! I love that because my kids definitely don’t share my mushroom love. I think I’ll try to sneak them into some meatballs.
I have made French onions soup many times, you do not have to put any liquid with your onions , they produce juice as they sweat., I do not use any alcohol ever, that’s only a French thing , but you do you, I love your channel

Loved your video and you have many helpful tips to offer others. I bet your kitchen smelled great. I do have one suggestion and that is to put water in the bowl to wash the basil leaves and then strain it in the colander. You might get cleaner basil that way.

These recipes have been tested for safety. I wouldn’t add veggies. Sorry.
How many servings per jar
It depends on what you consider a serving and how you eat it (served over rice, pasta, etc.). Each jar is a quart, so you could consider it four servings of each person eats a cup.

Hi there! I’m so glad you’re getting the Nesco canner; I hope it serves you really well 😊. I can definitely do a video on cranberry juice-it won’t be long before the stores are stocked with cranberries again. The juice is water bath canned, so it doesn’t have to be canned in the Nesco, but it can be canned in it if you stick to pints.
You need to invest in a vacuum sealer for your frozen foods
Yes, I know that would be better for preserving all the flavor/texture of the food. I’m buying a little bit of gear at a time, but maybe I’ll get one next year.

I love your pantry shelves! Mine is much smaller. It’s mostly for me because my hubby just isn’t accepting of canned goods. If I use it in a casserole he doesn’t know it’s there so that’s ok. But he won’t eat any of my jelly or jam. I made grape jelly just for him but he only eats the store brand. 😢 this year I am just having fun with it. I made honeyed yellow tomato butter. I mix it with my yogurt. I also made some tomato soup with heirloom red, yellow and orange. He’ll be eating that 😏. I’m making tomatillo salsa next. Thanks Marta!
I’ve known a few others whose husbands were wary of canned goods. I laughed when I read that you sometimes sneak them into casseroles 😆 I’ve never heard of tomato butter. That sounds great! Best of luck with your tomatillo salsa!
Your shelves of canned goods looks so pretty! Becky from Acre Homestead uses containers in her deep freezer with strap type handles making moving and lifting the containers out easy. I don’t have that style freezer but just saw her organizing her freezer.

Thanks! I do my garden projects/filming each week on a day when my mom can take my kids for a couple hours, so sometimes I just make things happen despite the weather.
You are doing the raw pack method and it’s my understanding that jars should be kept at room temperature and the broth shouldn’t be heated either. Am I wrong?
Good question. I’ve seen raw pack recipes that call for room temperature liquid, but for this recipe, Ball specifies heated jars and hot broth.
Raw packing does not require all ingredients to be at cool temperature. Raw packing merely refers to the main ingredient not being cooked or blanched in advance. You will generally have less product and more liquid in your jar after canning is completed.
I have been keeping bees now for 5 years. Started with 3 langstroth hives. Went thru the 2 year learning curve. Now raise my own new colonies to replace loses. Three years ago I built a Kenya hive during the winter. Bees love it. It took 2 years before bees completely filled it with comb but now it produces new colonies every year. My long hives seem to winter better than Lagstroth hives. Since then I have built 3 long hives that use langstroth deeps. 35 frames each. All produce well and yes they are so much easier to work with. Eventually I will replace all my hives with long hives.
That's great! Since making this video, I've heard from a lot of people who love their horizontal Langstroth hives. I would definitely like to give that a try at some point. It's reassuring to hear that your horizontal hives do well over the winter. My first colony didn't make it through this past winter, but I've got a new colony and I'm hoping this is my year. All the best.

You can make pumpkin raviolis using the wanton wrappers made of rice so they r gluten free. They r very tender, I made a sage and butter sauce for them years ago. Very yummy. I make pumpkin cookies every fall, my family loves them.

Man those broccoli crowns are just beautiful. All the veg are so nice. One thing about the pumpkin. I don’t think there’s a safe recipe for purée. The only canning recipe I’ve seen is for chunks. But check your recipes for sure. I want o do some tomato salsa and hot sauce too. The hot sauce is for my daughter. Plus I have a lot of tomatillos. Still looking for ideas for that. How long will it last in the fridge
If you're asking about the pesto, it will last for two weeks in the fridge, but it will start to lose some color and flavor after a few days.
Can you not harvest basil after it seeds?
Yes, it just slows down its growth a lot if it seeds, so I try to harvest regularly to encourage it to keep growing.

Here is something I do and it really helps with the debubbling. If you put a little of your liquid in the bottom of the jar it will start filling in the air bubbles on its own.
