The differential feed is not for turning corners, but instead it accounts for stretchy fabrics. So , very stretchy fabric needs a higher differential . This means the front feed dogs move faster than the rear ones. If on the other hand, your fabric is puckering, you want to reduce the differential so it stretches slightly as it feeds through. You can also use it to serge a lettuce leaf edge. Anyway, great presentation, especially for someone new to a serger. Nice use of old towels.
You can lock the coverstitches at the end by pulling the needle threads forward (lift presser foot first), cut them and then tug carefully so these end up at the back. This is a standard and easy way to lock them.
