Ugh my brain makes me made most days. And exhausted. I’m pretty certain it’s ADHD but haven’t explored a diagnosis. I’ve been feeling better about the fact that adhd is most likely the why. So I feel less broken.

Hello Erin! I remember you were looking for crockpot recipes & I have a delicious one for you! I did mine for 2 hours but I’m sure you can do longer.
Chicken Enchilada Soup:
1 can black beans, drained and rinsed
1 can Ro-Tel, undrained (I did mild)
1 can refried beans
1 can petite diced tomatoes, undrained (14.5 oz)
1 can sweet corn, drained
1 can white chicken breast, undrained (12.5 oz) or any cut up chicken breast (I did canned for convenience + sake of time)
1 14 oz can of chicken broth (or a 32 oz would work too)
1 packet of taco seasoning ( I only did half)
& you literally mix it all up and that’s it! Add sour cream and shredded cheese once in the bowl. Enjoy!
Also don’t forget Sunday the 16th is Father’s Day in case you want to mark it! 🙂
