Greetings from NZ, great work and a good idea to have many helpers on the initial cleanup. Also good thinking to have a wheelbarrow each! I wouldn't worry about those grape vines as grape vines need to pruned each year and cut back quite harshly. Get some pointers off TH-cam. I look forward to following your progress. Cheers
The amount of clay tiles you've salvaged will be enough to rebuild some walls. But, if you want to jeep them visible, they can also be used for some rustic flooring.
You may as well trim those grape vines mostly back to the trunk. Grapes only grow on new growth. If you observe vineyards around you, you will see that every fall they trim their vines.

You have got a boatload of Bamboo on that property that you can harvest and use for temporary shelters, supports, fencing, etc. Its invasive and should be cleared anyway. BTW beautiful property.

Nice! You asked for advise, here goes. 1. Don't move material twice, plan your activities, forward think your storage. 2. Shovels, pointed for digging and moving material, flat for scooping and minor digging. 3. Safety, wear your PPE, save your eyes, ears and hands. I have subscribe, so far i am liking the content. 4. Flat metal sheet material, already used walk on it to flatten before installation. Editing, love the time lapse, keep this up, it keeps the video moving, no need for wheel burrow action shots, you'll run out of GOPROS. Keep your on camera verbiage minimum, too much face time and talking is boring to your viewers, if you must be on camera, keep it short, tell us what you are going to do than go do it . I enjoyed how you edited your content with the voice over. Audio, music and or construction sounds seems to work. FYI I have unsubscribed to so many TH-cam posters because they talk to much during their post, there are few exceptions, 1. Perkins Builder Brothers, their information is informative, useful, sometime witty. 2. Ants Pants, he is witty and their is humor in his content. Ask viewers to like the video a couple times during its run, I like how you have the "Subscribe" option in the lower right hand corner. You have a interesting project and had great comments during the video run, I liked the "Sit Down Count" during Lillian's on camera time (humor), oh by the way, more of her.
