I have a Sage 1 in Maxamet. The edge geometry of any Sage is going to make a cutter. The steel, as you say, just make it last. I'm perfectly satisfied with 14C, 154CM, and D2, but knowing you have the extra horses is always nice.
That is a perfect way to say it Jim. There's nothing wrong with the steel and if you want longevity as a person working with your knives then they're great. Thanks

I find that when cutting paper their is a grain direction that can affect the “bunching up” you speak of. Once you find the grain I’d hold the paper the same orientation each time.
Paper does indeed have a grain and if a knife can’t slice against the grain it isn’t that sharp. Some of us sharpening guys use 17gsm paper and push cut against the grain to check the level of sharpness (this is a ridiculous level of sharpness and many can’t get there but nor is it really required). If not going for pushcuts then draw slicing against the grain on newsprint or phone book paper is sufficient and a good standard to aim for. If it doesn’t do it it automatically equals a fail.
The Sage series as a platform (I suppose the Taichung-version of the Para3?) is really fascinating. To my eye, the Sage leaf is more pleasant than the Para3 (though I have a Para3 and not a Sage... hmmm). Definitely feel like the most attractive aspect of Spyderco knives now is reliable, tough, slicing knives that use a variety of steels. Most of the time, design-wise, my eye is drawn toward other aesthetic characteristics (there's this guy on the internet who designs knives... Storm? Hurricane? Typhoon? Can't remember but he has one coming out soon 👀)
I would say the blade shape on the para three is more aggressive than the sage. The sage is a more traditional blade shape in my opinion and the overall ergas and feel are better. And yeah I know that guy. LOL. Thanks
Funny. I remember when they used to say if your running your knives hard all day long and doing a lot of cutting then you wanna go s30v over 420 We really are spoiled now Nice vid

Superior edge holding but if you’re looking for toughness this isn’t the one but if your looking for knife that’s gonna stay sharp for long time this is the one . Most people will never need to sharpen this knife
@@KnivesFAST REX 121 has about the lowest toughness possible sadly. According to Larrin Thomas, it's about a 1 on toughness, but an *insane* 12 on edge retention (and about 3.5 hardness/corrosion resistance). It's even below Maxamet in regards to toughness.
You paper cutting issues are not you, it's the grain direction of the paper that you are fighting. It's easier to cut the paper with the grain than against it. Cutting paper cleanly against the grain of the paper requires an extremely sharp knife with a thinner behind the edge profile blade grind than most common pocket knife grinds are behind the cutting edge. I worked in the printing industry for 40 years so I have some knowledge of paper products and how to test a sheet of paper for grain direction. Paper is no different than wood, cross cutting the grain of a board is harder than a ripping cut if you don't use the correct saw blade.
Rex 121 and maxamet is just stupidly overkill lol it needs some other properties to be worth 300 $ imo. Sage 5 and sage 1 is the best spydercos imo really hope to see some other steels on them.
Yeah, the sage knives are my favorite and you're not wrong about the seals. For most people. Their definite Overkill but I could see where for some people's uses. It might be good. Thanks

I love playing with new steels, but my actual needs are fine with 440A or AUS8. That said, I enjoy messing around with supersteels.

Actually Rex121 is the least tough steel on Dr.Larrin’s steel charts.

S30v is much tougher than Rex121.
