I have to agree with you the sel premium is the best value you had most of the limited features minus the real leather, dual sunroof and limited price. I opted for the sel premium instead of the xrt due to the features the premium has with captains chairs. I prefer the captains chairs over the bench seating because what you pointed out with the middle seat especially for the 3rd row middle can extend your legs out
It's really personal preference but both SEL Premiums are great options. I don't know that many people actually need the bench but I know there are some people out there that do want it. To offer no loss of features with it is great!
I was hoping to see what the 8 passenger version looks like with all the seats folded down. Is there a gap between the front row and 2nd row when folded down or does the folded down 2nd row abut the driver and passenger seats?

Yes! You get every option that the captains chair vehicles get. That means heated and cooled 1st and 2nd row seats.
